full of protein and healthy fats 😍 secretly healthy tart is like a cross between pumpkin pie and chai latte and it requires no baking 🥰 i always always say you should get your daily fruit and veg in with dessert 🙊

1 cup pecans
1/2 cup oats (60g)
8 medjool dates (52g) (soak 30 mins in boiling water if not juicy)
1/4 tsp salt
1/2 cup cashews (soaked overnight or 30 mins in boiling water)
1/2 cup pumpkin, roasted and pureed
3 tbsp maple syrup
1 tbsp lemon juice
¼ cup full f*t coconut milk (canned)
1 tbsp coconut oil, melted
1 tsp cinnamon
add oats and pecans to a food processor and blitz until crumbly.
add dates and salt and blend until wet, crumbly dough is formed. you can add a tbsp of water if it’s too dry. press the dough into a tart pan and place in the freezer.
filling: blend all ingredients except coconut oil in food processor and blend on high speed until creamy.
add melted coconut oil and blend for one minute. pour into chilled pie crust. refrigerate for 5 hours or more or freeze for 30 mins. slice and serve! ⠀⠀⠀⠀⠀⠀⠀
