I love utilising everything from produce so nothing goes to waste.
whenever i make zucchini noodles i am often left with the centre part which i love to save to make things like this no bean beetroot hommous recipe is below. this recipe is so easy to make and it’s so delicious a great dip to have on hand.
3 cups zucchini peeled
1 cup beetroot
1/2 cup almonds soaked
1/3 cup tahini
1/3 cup lemon juice
1 tbsp coconut balsamic
2 fresh cloves garlic
1 tsp cumin
1 tsp salt
place all ingredients in a high speed blender and blend till smooth.

raw vegan lamington donuts
1 1/2 cups raw cashews
1/2 cup macadamia
3/4 cup coconut flour
3 tbsps protein natural
1 cup dessicated coconut
1/2 cup brown rice syrup
1/4 cup coconut milk
1/4 cup coconut oil
1 tsp vanilla
🇦🇺 place cashews, macadamia nuts and dessicatwd coconut on a food processor and process till fine.
🇦🇺add the coconut flour, protein and vanilla and process till combined.
🇦🇺 add the remaining ingredients and process till mixture comes together.
🇦🇺place into a donut mould leaving the base intact so that we can put jam in the indented hole.
🇦🇺refrigerate till set
chocolate dipping sauce
1/3 cup coconut oil
1/4 cup coconut nectar
1/4 cup cacao powder
1tbsp cacao butter
🇦🇺place all ingredients in a blender and blend till smooth. place in a bowl and set aside.
raspberry chia jam
1 cup raspberries
2 tbsps coconut nectar
1/2 tsp lemon juice
2 tbsps chia seeds
🇦🇺 place all ingredients in a blender and blend till smooth. 🇦🇺 mix through the chia seeds. place in a bowl and set aside.
🇦🇺de -mould donuts
🇦🇺place an extra 1 1/2 cups dessicated coconut in a bowl for coating.
🇦🇺dip donuts in chocolate sauce and then coat with dessicated coconut.
🇦🇺 fill the centres with jam and place in the refrigerator to set.

beat the summer heat this week with one of these refreshing popsicles.
no churning necessary these popsicles are nut free packed with antioxidants and good fats. the star ingredient in these is avocado 🥑. they are super easy to make and so refreshing.
matcha 🍵 avocado 🥑 and lime popsicles
2 large avocados 🥑
1/2 cup coconut 🥥 milk
1/3 cup brown rice syrup
1/4 cup lime juice
1 tbsp matcha @matcha_maiden
1/4 cup mint
🌱place all ingredients in a blender except the mint. 🌱blend till smooth and creamy.
🌱check the flavour sweetness may need to be adjusted. i added a few extra drops of stevia to mine. if you prefer it more tart add some more lime juice.
🌱once your happy with the flavour add the mint and blend briefly still leaving bits of mint through.
🌱 place into your popsicle moulds and freeze for 6 hours.
🌱 enjoy this refreshing treat guilt free.
