she is such an amazing big sister, student, gymnast, friend and fierce girl. wow it happens fast! promised myself that i wouldn’t get teary-eyed writing this post, but i did anyway. miss you willa and can’t wait to celebrate your first decade when i get home tonight🥰 🎈 🎂 🎁
I see you spring! and i’m ready to haul out the 🧺 basket and blanket whenever you are (i think we need about 10 more degrees for that). here’s a picnic perfect lunch that’s inspired by my trip to copenhagen two years ago. it’s a an open-faces sandwich called smorbrod that’s served all over denmark. it always starts with a sturdy, healthy rye bread (this one’s from @breadalonebakery ) and they can be topped with any number of fresh and cooked ingredients, such as peas, eggs, salmon and radishes. you can mix and match toppings and they’re super fun to eat😋
and since it’s still #nationalnutritionmonth, i’ll point out that rye bread contains resistant starch—a type of carbohydrates that acts like fiber and helps you feel full longer. it also helps boost gut health, so it’s a win-win!
I ❤️ traditional #hamantaschen, but i decided i wanted to add an extra dose of fun to this year’s batch. so i took my foolproof recipe (watch me make them in the @youtube link in my profile) and added natural 🌈 #sprinkles to the dough and on top.
Happy st. patrick’s day! add a touch o green to your day with my emerald muffins (no filter here). i packed 3 cups of baby spinach into these beauties, for a healthy serving of iron and folate. 🍼 breastfeeding moms, listen up—these muffins also contain oats and almonds, which are all foods that may help you boost your milk supply (spinach helps too), so you have an extra important reason to make a batch today😁

I don’t know about you, but i didn’t eat many leafy greens this winter—it was just too cold. but now that it’s nearly spring and warming up, i’m starting to add them back into my repertoire😋
at this in between time of year i like combining comforting whole grains, like the farro here, with healthy proteins, like this wild alaskan salmon, some roasted veggies and fresh arugula. for even more healthy fats, i sprinkled some h**p seeds on top of the salmon👍 here’s to the arrival of spring and all the gorgeous produce 🌈 that’s in our future!

When your week is all deadlines (work, home, etc.), it can be tough to feed yourself right. that’s what makes me ❤️ #toasttuesday even more. you can take something that might nutritionally be meh, and amp it up really easily. like avocado toast + 🍳 and peanut butter toast + banana.and a side of fruit that was already washed and cut up.
this is the type of plate that my mom used to put together for me when i was stressed and trying to balance schoolwork and sports. thx mom for never settling for junk food for us, even when it would have been easier and cheaper for you😊 here’s to crushing your deadlines this week friends!
