Happy monday! looks like nearly everyone was baking over the weekend. i discovered some fresh cranberries left over from thanksgiving and thought i’d use them up. turns out that cranberries play well with pumpkin and oats and make your muffins look extra festive. and since we all overslept today 😴 it was super nice to grab a few to eat in the minivan 🚐 on the way to school.

The holiday season and all the celebrating that comes along with it can really do a number on your immune system. i try to keep mine fortified with immune boosting meals, like this gut health grain bowl 🍲. i take whatever whole grain i have on hand, like quinoa or brown rice, and top it with kimchi (for probiotics), pistachios (for prebiotics), brussels sprouts (fiber and flavor), mushrooms (vitamin d for immunity), and a fried egg (protein, choline and more d). you can really use whatever you have handy, as long as you top it with foods that have these various elements (but that vitamin d is tough to find). grab the simple recipe in my profile and start fortifying yourself today😋
