Vegan pandan custard with steamed butterfly pea flower glutinous rice; southeast asian bite-sized dessert( kuih salat/ kuih seri muka ) 💙💚

ingredients 💙glutinous rice layer
2 1/4 cups (250g) glutinous rice, soaked overnight
1/3 cup coconut milk
1/2 tsp salt
2 pandan leaves, knotted
5g dried butterfly pea flowers
1/3 cup boiling water .
💚pandan custard layer
6 pandan leaves
1/2 cup water .
1/3 cup all purpose flour
3 tbsp tapioca flour
2 tbsp cornstarch
1/3 cup sugar
200ml coconut milk
1/4 tsp salt .
💙 make an extract with the butterfly pea flowers and boiling water. place the flowers and water in a heat resistant bowl. let it soak for 10 mins until the water turns dark blue. drain well to extract all the liquid.
💙 combine salt and coconut milk. mix coconut milk with soaked glutinous rice. place a knotted pandan leaf on the glutinous rice and steam for 30 mins. .
💙 pour blue pea flower water (in patches) over the rice and continue streaming for 10 mins or until cooked.
💙 once glutinous rice is cooked, transfer to an oiled (8.5 x 4.5 x 2.75 inch) pan. compact glutinous rice, firmly and evenly.
💚 blend the pandan leaves with water and strain the pandan juice, set aside. .
💚 in a large bowl combine custard ingredients, add pandan juice and whisk until smooth.
💚 stir mixture in a saucepan over low heat until it turns slightly thickened. remove p*t from stove and mix thoroughly. strain mixture through a fine mesh sieve.
💚 pour pandan mixture onto compacted glutinous rice. steam for about 30 minutes or until the toothpick comes out clean. allow to cool for at least 4 hours before slicing. use an oiled knife to slice cake. .

Meet 21-year-old photographer and director myles loftin (@mylesloftin ), an advocate for sharing stories of underrepresented communities and stories. “probably more often than not i would say that i felt like an outsider in spaces. and i guess maybe that’s why i’m so passionate about making sure that people feel seen, because i know what it feels like to not be seen and to not feel comfortable in a space,” says the parsons school of design student.
“i #shareblackstories through my photography, making sure to highlight the black community as much as i can,” says myles. “also just through me existing. i am a black story walking.”

“i feel like being a black man in america, there are a lot of expectations that are put on you. expectations about the way you should act in public, the way you should express your sexuality, the way you should dress — and it can often be a lot of pressure,” says 21-year-old photographer, director and student myles loftin.
“but i also think that being a black man in america means that there’s a lot of possibility. at least right now i’m seeing a lot of possibility for myself and for the members of my community to exist freely. and i feel like we’re really taking advantage of that right now in a really positive way.”

the married couple met on instagram in 2014 after joshua’s photography account magically popped up on mekdes’ explore page. ✨
“when we first met each other on instagram, our exchanges were in good fun,” mekdes says. “it wasn’t until we became friends first that we explored anything more than that.”
last year, the couple tied the knot and celebrated with three ceremonies to honor each other’s ethiopian and ghanaian cultures.
