I’ve been eating one of these flaky, buttery mince pies every day for breakfast since sunday when they came out of the oven.😁 i thought i’d made a mistake when i took my pastry from the fridge to roll out - i realised every mince pie i’d had in the last ten years had sweet, crumbly pastry, and i’d made a rough puff one, without consulting any mince pie recipes. 🀦‍♀️ i decided to use it anyway because 1. time & 2. *i* like puff pastry. when they came out of the oven i realised these were the mince pies i’d grown up with, the version my mum made every year when i was small. later sunday, when i served them up to friends, i learnt that it’s like the jam vs cream first on scones: the pastry type depends on where you live/your family tradition.
in conclusion, i am 100% team puff. what about you? 🧐

Gin cake! i know! 😲 you get to have your gin and eat it too! πŸ’ƒ this masterful creation was from the lovely & talented @lily_vanilli_cake using @boodlesgin_uk mulberry gin. 🍸 (the subpar decorating effort is all me. πŸ™ˆ) there’s gin in the batter, gin in the icing and gin in the raspberry coulis. πŸ™ŒπŸ» hic. it was seriously delicious. it was also vegan but you would never have known. i got sent home with a bottle of gin and good intentions to recreate it. i’m betting i get as far as the raspberry coulis. πŸ˜„ recipe below if you want to try! raspberry & lemon tea cakes
ingredients - cake
• 220g plain flour
• 200g caster sugar
• 225ml soy (or other non-dairy) milk
• 80ml olive oil
• 15ml boodles mulberry gin
• 15ml white vinegar
• 1 tsp baking soda
• 1/2 tsp salt
• zest of 1 lemon
• 15ml white vinegar
• 30 raspberries
• 1⁄2 tsp grated nutmeg

ingredients - icing
• 15ml boodles mulberry gin
• 125g icing sugar (you may want to add a little more or less - just add until you get a smooth
consistency you like)

ingredients: quick gin raspberry jam
• 300g raspberries
• 2 tbsp boodles mulberry gin

to decorate:
• dried mulberries (optional)
• edible gold powder (optional)
• nutmeg to grate
• rosemary / flower for garnish •••

Trying not to be sad and frustrated by all the work i have missed and am missing, and focus on the pleasure of having a legitimate excuse to stay in bed and eat warm cinnamon buns and read and doze. πŸ’›#alwayslookonthebrightsideoflife

I’m home. ☺️ i found myself waking up last night at the same times the nurses would do their rounds to take our blood pressure or give out medication. i was sent home yesterday in more or less the same pain as when the anaesthetic wore off on friday. but my bed was needed for someone more urgent. i spent 15 minutes at 4am this morning trying to muster the strength to get the painkillers that were within my arm’s reach, but i will recover better without the lights and beeps and regular wake ups from staff and the patients who suffered audibly. i am terrified of having to go back through a&e but giving up my bed is all part of relieving the chaos there & i’m so lucky to have someone to look after me here. i am so grateful to the nhs. πŸ’™ it is an incredible, multilayered, chaotic organisation that saves so many lives without adding financial pressure to patients’ pain. ❀️ πŸ₯ β˜•οΈ i met several truly wonderful, kind & dedicated staff who made my stay so much more comfortable. one sweet senior nurse told me to drink lots of peppermint tea and get up every few hours. i love this tea maker @wearetea gave me a few months ago. it’s a company i’m thrilled to tell you about because by the end of the year they will be 100% plastic-free. πŸ‘ŠπŸ» it’s a very good peppermint tea, too. πŸƒ also this £30 kettle from aldi my aunt bought me can be set at every ten degrees from 40-100! πŸ‘πŸ» we didn’t get a hot water tap because the only one that had options for under 98 degrees was a bit more than our budget could stretch to. plus our induction @stovesuk boils water in a pan faster and more efficiently than a kettle. 😲🀷‍♀️ 🏠
i’m particularly proud of this cupboard. we wanted a timber tambour door but were quoted £1300. 😱 even the aluminium version was £800. so instead we got this £40 concertina blind from @ikeauk and our amazing builders created the bespoke frame around it to sit on top of the @diykitchens drawers and @caesarstone_uk quartz. we rarely close it but i really like that we can. 😊

It might be my birthday but i’m feeling pretty far from the princess in the tower i am pretending to be here. πŸ‘ΈπŸ»πŸ° i am feeling thankful but also pretty sorry for myself! 😊 -
hospital food is *mostly* edible, but really not a sight i’d inflict on you so you can have this healthier looking picture of me in sintra last week. πŸ˜„ i’m on the mend now, thank you nhs. still in pain but mostly just bored. i’m not allowed visitors until 2pm - even on my birthday. 😒 -

yes, this is a plea for attention and distraction while i lie on my very exciting bed with all the buttons. πŸ˜† thanks for indulging me. 😘 -

it’s at the @chinchinicecream stand at @tasteoflondon. the pastry is perfect and it’s full of cherries with the perfect balance of sweetness and the tonka ice cream is creamy and the perfect foil. ❀️ beautifully styled by @felicityspector. if you’re going to #tasteoflondon don’t miss this.
i can’t remember when i’ve had something more delicious - even better than the amazing pastel de nata from @pasteisbelem earlier this week.

I was warned that @pasteisbelém might not live up to the hype of the queue and its position as the original pastel de nata creator. i don’t know if it was because my expectations were lowered, but this was the best custard tart i’ve ever had. 😍 the pastry was so crispy and the custard so silky and not too sweet. check my stories to hear just how crispy. πŸ’›. i’ll be heading to try the other famous custard tart before i leave. #importantresearch #willtravelforfood

My happy place. ❀️ if you need me, i’ll be here all day. ☺️ i’m finding it so hard to tear myself away from the house now that the renovation is (almost!) done. almost includes the lights needing to be adjusted so they’re the same length - good old delivery issues. i think one in three things we ordered turned up wrong - we still don’t have a toilet downstairs despite ordering it in july. #nomorerenovatingforawhile πŸ™ˆ #stillveryveryhappy

An apple a day... 🍏 swipe to see inside possibly the most incredible creations of patisserie i’ve ever seen - by @cedricgrolet. the first thing i noticed on cutting was the smell of dill (which i’ve never liked 🀨) but it was much more subtle on tasting and the cubes of granny smith were so fresh. it was actually about as extraordinary as its €17 price tag. yep, i spent €17 on one patisserie. 😳 check our @eatnlondon for the black πŸ‹.πŸ–€
