cacao cashew cheesecake
total time: 4 hours to soak nuts, 25 minutes preparation, 4 hours freezing

serves 16

ingredients:
for the base
2 cups @bobsredmill almond meal
2 cups hazelnut meal
4 tablespoons @phreshproducts cacao powder
1 tablespoon @nutiva mct oil
5 large dates, seeded
5 tablespoons @vitacost maple syrup (or raw honey)

for the cheesecake filling
1/2 cup lemon juice (approximately 2 large lemons)
1 1/2 cups cashew nuts, soaked in water for 4 hours to soften
1 1/2 cups hazelnuts, soaked in water for 4 hours to soften
3/4 cup + 2 tablespoons vitacoast maple syrup
3/4 cup nutiva refined coconut oil
1 tablespoon pure vanilla extract 1/8 teaspoon salt
3 tablespoons phresh products cacao powder

toppings:
1 @hukitchen chocolate hazelnut bar
¼ - ½ cup hazelnuts

directions:
1. make the base. in a bowl, combine all the ingredients until well combined. you can use a food processor. or use your hands to mash in the dates. the mixture
should be dry, but moist enough to hold together. press the base mixture into
a deep pie dish (large enough to hold 21⁄2 quarts), or use a spring pan, and
press it evenly to cover the bottom and sides of dish. set aside.
2. make the cheesecake filling by adding all the ingredients in a powerful blender
and blend until filling is very smooth and light in texture. there should be no chunks. pour the filling into the crust.
3. add whole hazelnuts on top. melt the hu kitchen bar on low heat and then drizzle over the cheesecake.
4. freeze for 4 hours. once set, cut into slices and serve. keep refridgerated for up to 14 days.

Waiting for the next good thing like... πŸ€—πŸ„‍♀️ after every good set of waves there is usually a waiting period before the next set of good waves come! πŸ™πŸ»(where i was surfing here in canggu was about 6 minutes sometimes 9 and sometimes 3 minutes lol πŸ˜…) 🌊 today i’m practicing really taking in some good news i’ve had in the past few days, to really absorb it and be totally grateful for it, instead of quickly moving on to the next thing. our lives can be so busy with the next and next thing but we feel more fulfilled when we fully let good stuff in and absorb it. one of the things i wanted to do more of this year was let gratefulness settle in more. what’s the one thing you are practicing today? .

A recipe for the weekend.... this was inspired after living 8 years in usa. πŸ‡ΊπŸ‡Έ buffalo is such a classic taste and i’ve come to love it!!! πŸ‘ŒπŸ»πŸ˜‹πŸ€€ this dish is soooo delicious, i hope you try it! especially if you love the hot & sweet buffalo taste, marinated on organic chicken, and partnered with gluten free red lentil penne 🌢πŸ”₯😍 .

here is the recipe for you to enjoy forever (of course add your own spin to it too!), and to make it vegan with cauliflower instead of chicken.

serving size: 4
.
ingredients:
1 lb. organic chicken, cubed
1 box @explorecuisine red lentil penne
2/3 cup hot sauce
1/2 cup melted @nutiva coconut oil with buttery flavor + 1 tbsp.
1 tbsp. nutiva mct oil
1 tbsp. honey
1 tbsp. apple cider vinegar
1 tbsp. paprika
1/2 tsp. garlic powder
1/4 tsp. @redmondrealsalt β €β €β €β €β €β €β €β €β €
.
directions:
1. in a large pot, prepare penne according to package directions.
2. in a large bowl, add hot sauce, coconut oil, mct oil, honey, apple cider vinegar, paprika, garlic and salt. stir until well combined and a thick sauce forms.
3. in a separate bowl, add chicken.
4. pour half of the sauce over the chicken and let marinate for a few minutes.
5. meanwhile, heat a frying pan with 1 tablespoon coconut oil.
6. add marinated chicken and heat until cooked through, about 8 minutes.
7. once done, drain pasta and return to large pot.
8. add chicken and remaining sauce. stir to combine. top with an organic vegan / sour cream. πŸ™ŒπŸ»
