a little over a year ago, i started writing and planning my first book.
wanting to share ideas and recipes for my kind of drinks, i put pen to paper and set out to write and plan a book of varying degrees of difficulty. not only for the professional bartender but for the home enthusiast as well.
fast forward to today, and i can now at least reveal the front cover. (more news to follow).

it's national bbq week. let's make the most of it while the sun is still shining! these grilled artichokes with juniper butter are from @niklasekstedt food from the fire cookbook. pic by @liznmax ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀
serves 4 ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀
2 globe artichokes, trimmed
6 tsp salt
55g/2oz/4 tbsp juniper butter (see recipe below) ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀
start the fire, using firewood, and place a grill grate over it. ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀
put the artichokes in a pan, add the lemon and cover with water. add the salt and bring to the boil over medium–high heat. simmer for about 30 minutes or until a leaf pulls out easily. drain the artichokes and leave them upside down to drain and cool. ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀
cut the artichokes in half and remove the chokes. grill the artichokes, cut side down, over medium heat on the grill grate for 5–8 minutes until lightly charred. serve hot, with juniper butter.⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀
juniper butter ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀
85g/3oz salted butter
2 juniper berries, crushed ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀
melt the butter in a saucepan over medium heat. add the crushed juniper and increase the heat. when the butter begins to simmer, start whisking constantly. this will prevent particles settling on the bottom and getting burned. keep stirring until the butter is light brown. remove the pan from the heat before the butter burns. pour the butter into a bowl. use fresh, or cover and store in the refrigerator for up to 1 month. ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀
