in @loblawson's the 100 mile meal event, @ocean_wise executive chef @nedbell gives a demonstration of cooking environmentally conscious earth-to-table dishes that's very easy to do at home. #tastethenewnext: fresh from the fields and sourced less than 100 miles away, local food is unbeatable when it comes to flavour and sustainability. 50% of the food we consumed globally last year was farmed. there's a challenge with an understanding between farmed and wild. we need farmed, to help the wild recover.
in north america, we pretty much exclusively forage four kinds of seafood: tuna, white fish, shrimp, salmon. but think about the ocean: there's thousands of things in the ocean that we could or should be eating. challenge yourself to try new things.

today, i got a chance to attend a @loblawson cooking class on the theme of #eatnaked campaign at the maple leaf garden location. i spent a fun lunch afternoon learning about raw, healthy cooking from chef matthew kennedy. you can visit the loblaws facebook page (or here http://izea.it/aknqgg7 ) for a list of the free events over the next few days.
for this artichoke goat cheese pate french salad, key item to remember was 3:1 ratio for oil/fat to sherry vinegar. the sugar level can be adjusted from 1/4 to 1/2 tsp. once the sauce is ready, you can pour the mixture into the green mix and top with toasted pine nuts, artichokes or caper berries (so good!) the egg omelette was also made during the class with herbs from the hanging garden! the combination of the simple egg and salad went well together. this recipe can be found online at the www.pc.ca. bon appetit!
