#9daysvegan and i’m experiencing new depths of presence and awareness. my mind feels sharper and it has struck me how calmly resolved i feel about this transition. it doesn’t feel strict- i feel liberated. this transition from usually pescatarian to vegan feels so smooth and honestly easier than eating the way i was. i think i’m eating less processed foods. definitely cooking more. eating this way has brought my awareness to a new level of grounded. i fee i am tuning into a finer receptivity of my body’s signals. especially when i ate this massive salad- greens mix with roasted golden beets, tomatoes, cucumbers, 1/2 can of mixed beans, kalamata olives and a dressing of olive oil, red wine vinegar and everglades seasoning. half way through i felt so full so i stopped and just watched the clouds and drank water... 5 minutes later i was back into it until i got to that last delicious olive. 🤤 i realized i was so full and yet didn’t feel heavy or sleepy or weird just immensely satisfied. though i did have a headache for awhile today- may have overdid the everglades seasoning. all this to say, i am so grateful for taking this #onemealatatime and trusting my body’s guidance. oh, idk what to call what i made tonight for dinner but it was delish and you can scroll to see the loose ends from the fridge that ended up in my bowl- tex mex jackfruit with peppers, onion, cilantro, tomatoes, the other half of the canned mixed beans, white rice and a dollop of #kitehillcreamcheese because i had no sour cheese alternative and it struck my fancy. #wtfisthat#veganfood#vegancurious#vegan
