researchers found that some people’s repeated, severe allergic reactions stemmed from a red meat allergy linked to a specific type of tick bite.
doctors analyzed 70 patients who had repeated episodes of a severe allergic reaction, called #anaphylaxis , from unknown causes. anaphylaxis can cause a host of problems, such as trouble breathing and passing out. it requires immediate medical attention to prevent severe consequences, even death.
the researchers found that six of the patients had an #allergy to a sugar molecule called alpha-gal, which is found in red meats. most food #allergy symptoms develop within a half hour. people with the alpha-gal allergy showed symptoms between three to six hours after eating meat.
previous studies have linked lone star tick bites to this unusual food #allergy . the patients with the alpha-gal allergy lived in the central and southern united states, where lone star ticks thrive. all six confirmed that they had been bitten by ticks in the past. “alpha-gal allergy appears to be yet another reason to protect oneself from tick bites,” says dr. anthony s. fauci, director of nih’s national institute of allergy and infectious diseases (niaid).

Veggie burgers are one of my go to recipes. you can make a bunch at a time, which makes them easy to add to a weekly meal prep routine. i also love that they freeze well and still taste great even a few weeks later.
the secret to these patties is sweet potatoes! i like to get creative with my recipes, but i always to the same general ratio for veggie burgers. you can always try adding a different type of legume, grain, or seed to get different tastes and textures. here are the basics: - 1 1/2 c. cooked, mashed sweet potatoes, skin removed (to save time i typically cook in the microwave, then mash once cool)
- 1 1/2 c. cooked black beans
- 1 c. cooked rice
- 1/4 c. sunflower seeds
- salt, pepper, paprika, chili powder & cumin to taste - optional: sautéed onion, garlic, fresh herbs, or any other of your favorite add ins •
to make: mash beans in bowl using a masher or back of fork. stir in mashed sweet potato and rice. add seeds and spices to taste and mix well. form into patties using hands (warning: it will get messy!) or measuring cup, then place onto lined baking sheet. bake at 350°f for 15 mins, flip, then bake for an additional 15 mins or until firm on the outside. •
fun fact: i’m allergic to peanuts, soy, eggs, and a few other legumes and found it almost impossible to find a decent store bought veggie burger that didn’t use soy, lentils, or chickpeas as a base. i started making my own at home and love the taste that the sweet potato gives them. this recipe is super adaptable, so try your own version with the foods that work best for your diet. •
Oh my gosh dinner was so good...already cant wait for leftovers tmrw! homemade sloppy joes with all the veggies, and roasted okra and sweet potato. call me crazy but okra with a little salt pepper and onion powder tastes kinda like mac and cheese to me. 🙃 •
also did about 40 min of hiit workouts today. haven’t worked out much lately cuz i hurt my wrist a few weeks ago so i can’t do yoga 🧘♀️. decided to accept that fact today rather than watch and wait, and go all-in with my old-school hiit workouts, finishing with all my yoga stretches. hopefully i’m not too sore tmrw!
Doing some late night menu planning for the week? i’m not always on top of planning because i can easily become overwhelmed with too much food if i’m recipe testing throughout the week, but i at least like to have a few meals on hand that i can reheat on the go. i’ve been eating off of this pesto pasta i created for @moderntablemeals all week and it tastes just as good on day 5 as it did on day 1 (the best kind of meals 💁♀️).
to make this *nut-free* pesto, you’ll need:
• 1/3 cup sunflower seeds
• 1/2 cup fresh basil
• 2 tablespoons nutritional yeast
• 1 lemon, juiced
• 2 garlic cloves
• 1/4 cup olive oil
• 2 tablespoons water
• 1/2 tsp salt
blend in a food processor and put it on everything ✨

marinated mixed olives
1 (6oz) can black olives (halved if large)
½ cup pitted kalamata olives, halved
