lunch is the most difficult meal of my day. having my kids home for summer break is proving to make it even more difficult! i use my meal prep time to create healthy lunches to eat during the week. this helps me to stay on track with healthy eating and it eliminates hangry snack rages! 😏

i tend to make lunch my biggest meal and load up on veggies in between meals. πŸ₯’πŸ₯•

Cauliflower gnocchi might be all the rage right now, but i’m still loving the sweet potato gnocchi like whaaaaaat!

i simply added sautéed kale, onions, and asparagus, (and chicken sausage for the kids’ bowls. so easy and so delicious!

A few weeks ago my husband called me from work and asked if i was trying to k**l him. apparently the salmon i’d made had bones in it...who even knew i had to take the bones out?? 🀷‍♀️ up until a year ago i never ate fish, let alone knew how to prepare it. duly noted! remove bones before meal prepping.

the key to not gagging from that awful seafood smell is for me to mask it! this honey chipotle salmon is legit and it’s so easy and is a regular staple in my meal preps. recipeπŸ‘‡
.
.
• 2 salmon filets
• 2 tablespoons olive oil
• 1/3 cup honey
• 2 tablespoons chipotle pepper purée
• salt and pepper to taste
.
directions:
• drizzle olive oil over filets and season with salt and pepper
• whisk together honey and chipotle pepper puree
• put filets on grill and brush whisked honey and chipotle mixture on top of salmon, let it cook, flip and brush more into other side

Fats-once the “bad guys” of the 80s and 90s, now the darling of the new millennium. except that nutrition is far more nuanced than simply saying one food is good or one food is bad. even the above graphic is oversimplified and not all inclusive. .

so, why do we need fats in our diet? they:
•make our food taste good
•support feelings of fullness with meals
•enhance the absorption of certain nutrients
•support neurological health and development
•act as a long term source of energy

most foods contain a combination of all three types of fat, though the amount present varies from food to food.

the unsaturated types on the left hand side support heart health and can help increase the good cholesterol while lowering the bad. plus the polyunsaturated fats contain omega 3s, which most americans aren’t eating enough of. the saturated fats (found in the greatest quantity in animal foods and coconut oil) increase our risk of heart disease and cancer when over consumed.

truthfully, we need a mix of all three to get the benefits-but there’s no magic formula. just try to get a variety and lean into those oils. and don’t forget to eat your other macros too! happy tuesday!

happy #mealprepsunday ig friends! on my mission to get my family to eat more plant-based foods, i have found that prepping salads is one of the easiest ways.
.
they keep well when layered with the wet ingredients on the bottom (tomatoes, cucumber, etc) and the dry ones (lettuce) at the top. mine usually include shredded carrots, purple cabbage, cucumbers, cauliflower, baby greens, h**p seeds, pepitas, and avocado.

What do you love πŸ’• about your body?

i love that my body carried me through a killer workout this morning and it supports me each and everyday regardless of how judgmental i can be towards it. you see body acceptance and body love are not black & white and they very much fluctuate day to day.
.
if you’re struggling to accept your body, treat yourself as you’d treat your best friend: get a mirror look yourself straight in the eyes and give yourself a compliment.
.
repeat it everyday until you’re ready to start adding additional compliments. it gets easier each and everyday.

Invention from necessity! so my @gefen_foods cashew butter is nowhere to be found! so i took my @themagicbullet to a mixture of raw soaked cashews, cocoa powder, almond meal, and honey.

this is amazing. rich and delicious.
i'll attempt the recipe here, butcreally i was just eyeballing it.
1 cup raw soaked cashews
2 tbsp almond meal
1 tbsp honey
1 1/2 tbsp cocoa powder
hot water as needed for texture
🍫 ⭐️ πŸ˜‹πŸ« ⭐️ πŸ˜‹
it's thick and spreadable, and just a little chunky too.
if you're not into dipping matzah, apple slices would be amazing.
you could also sub out the honey for some dates.

i know i do. i’ve always wanted to be able to do everything exactly right, and right away. the thing is, life just doesn’t work this way and the more we lean into being imperfectly perfect the more we’ll accomplish and enjoy life.
.
take today for example, i took a class at the gym that was completely new to me. i stumbled through it with my uncoordinated self and i actually really enjoyed it, but if i had let perfection take hold i’d never experience anything new.
.
remember trying is better than perfect! happy monday lovelies!

What’s your favorite way to eat chickpeas?

one of my favorite is to roast them in the oven until they’re nice and crispy. then i season them up with a ranch seasoning and cayenne pepper. omg it’s delicious. i’ll eat them by themselves or i throw them in a buddha bowl.
.
.
so here’s the deal, before i learned to eat intuitively, a buddha bowl would be a pretty difficult meal for me. why? because putting a balance of items into the bowl that filled me up and satisfied me was really problematic. before intuitive eating i would’ve doubled up the spinach and tomato, measured an exact portion of chickpeas and quinoa, and i would’ve skipped the avocado altogether to save the calories. i would’ve been left with a meal that left me unsatisfied and still hungry.
.
.
intuitive eating allows you to balance your meals for your needs, not someone else’s. it allows you to build a buddha bowl that leaves you feeling nourished instead of sad and unsatisfied. we all deserve satisfaction in our meals.

I decided to go #morrocan tonight! ok so maybe the entire meal is around this za'atar flatbread i bought last week and is my new obsession.
all my favorite middle eastern cooks told me to use a frozen dough, but i didn't have it and i was stuck in the house with a sleeping baby! so i found this recipe (thanks, @maureenabood !). maureen hit the same wall as i did and ended up making a #pizza crust! great minds think alike!

Lemon chia jam πŸ‹
ok, you have license to make fun of me! 😝
my boys picked some delicious lemons for me and i just got it in my head that i wanted a lemon chia jam. but i couldn't use a whole lemon (or maybe i could, but i thought it would be too potent), so i juiced two and blended the juice with... zucchini. i peeled it and threw it in my #vitamix until it was all nice and blended. i added three tbsp sugar and boiled it all together.
then i added three tbsp #chia seeds, stirred, and let that gel as it cooled - while i got some pancakes πŸ₯ž going. #breakfastfordinner this was delicious. like lemonade syrup.
now i just need to make some biscuits for the leftover jam.
