So is that like a cake?? or maybe banana bread? well my friends it’s a little bit of both, you see, for some reason my loaf pan decided to die on me and the past 3 loaves of banana bread i’ve tried to make have been mush. they just would not cook. so many wasted spotty bananas 😞 but along came the cake pan to save the day and reunite me with one of my fave desserts to keep in the fridge!
this recipe is gf, vegan, and super basic, but feel free to spice it up by adding in chocolate or whatever floats your boat. if ya need me i’ll be over here with a very large fork and this banana bread cake thing in my lap🙋🏼♀️ •
basic gluten-free vegan banana bread🍌🍞:
- 2 very ripe bananas mashed
- 2 flax eggs (2 tbsp flaxseed meal + 5 tbsp water)
- 2 tbsp melted and cooled coconut oil
- 2 tbsp unsweetened organic applesauce (or sub for more oil)
- 1-2 tbsp unsweetened vanilla almond milk
- 1 cup @bobsredmill gluten free 1-to-1 baking flour (or any gf flour)
- 2-3 tbsp coconut flour
- 1 tsp cinnamon
- 1 tsp baking powder
- optional 1 tbsp coconut sugar
- almond slices
- sliced banana
preheat oven to 350f and grease a loaf pan (or cake pan i guess) or line with parchment paper.
first create your flax eggs and set aside for 5ish minutes. combine wet and dry ingredients in separate bowls, then pour one into the other and fold in.
add in some nuts then pour into your pan, add on more nuts and a sliced banana.
bake for 40ish minutes or until a toothpick comes out completely clean!

Banana crumb slice🍴
i make this when my bananas have gone beyond the cheetah spot faze... it’s simple
and it’s delicious with a scoop of ice cream
banana bread crumble
for the crumble:
1 cup rolled oats
3/4 cup brown sugar, lightly packed
1/2 cup all-purpose flour
1/4 cup vegan margarine, melted
1 tsp cinnamon
pinch of salt
for the bread:
1 cup all-purpose flour
3/4 cup cane sugar
1 1/2 tsp baking powder
1/2 tsp salt
1/2 tsp pure vanilla extract
1 cup nondairy milk
1/4 cup vegan margarine, melted
1/4 cup unsweetened apple sauce
3 medium or 4 small ripe bananas, sliced
preheat oven to 375f and grease an 8” square pan or loaf pan
combine crumble ingredients in a medium bowl until crumbly, set aside
in a large mixing bowl combine dry bread ingredients
in a separate bowl, combine nondairy milk, margarine and vanilla
pour wet ingredients into dry and mix until just combined, making sure not to over mix
pour batter into greased pan, top with bananas and then crumble
bake for about 40 minutes or until a toothpick inserted in the center of the crumble comes out clean
tip: for a richer, fluffier bread use 1/2 cup vegan margarine in the batter (no apple sauce)
i always try to lighten my baked goods with apple sauce because i know me, i’ll want more than one slice.
