Brazilian vegan freijoada with black beans from the book lean bean cuisine by jay solomon - i will eat it over rice - and buffalo chickpea pasta salad from @mealmentor will be my lunch and dinner this week. i’m also going to make a tomato and cucumber salad and eat lots of fresh salad greens daily. it’s a great feeling to know it is all prepared and in the fridge waiting when meal time comes around!

you’ve heard me talk about these for a while πŸ₯ž @debtkickindad has been #batchcooking them every sunday for the last couple months now! they are so delicious, healthy, hearty, freeze great, and make the perfect quick school morning breakfast (alongside some eggs for protein). here is the recipe (hubby quadruples it to last the whole week for our family of 6):
•dry ingredients-
1 1/4 c whole wheat flour
1/2 c quick oats
2 tsp baking powder
1/4 tsp salt
1 tbs sugar (optional but delicious and makes it so our kids don’t even ask for syrup)
• wet ingredients-
1 1/4 c milk
1 egg
1 tbs oil

mix well dry ingredients in one bowl, wet ingredients in another, then combine together. cook just like you would regular pancakes. we freeze them in stacks of 4 in large gallon bags that we reuse each week. we put the frozen pancakes in the microwave for 1-3 minutes depending on how many we are reheating, flipping every 30 seconds.

because these are made with whole wheat flour and oats they are full of fiber and very filling. it’s also super duper #frugal! enjoy!

el batch cooking trata de cocinar en un día preparaciones para el resto de la semana. así tendremos en unas horas todas las comidas de la semana.
y yo ya he hecho la prueba!!!!πŸ˜„πŸ˜„πŸ˜„ 1.- beneficios del batch cooking • ahorro energético. usarás los fogones y el horno una vez por semana en vez de siete. • ahorro económico. al planificar tu menú sabrás que y cuanto necesitas, evitarás tirar alimentos y eso es un ahorro enorme! • ahorro de tiempo. en dos horas, si te planificas bien, podrás comer toda la semana, de la manera tradicional usarás al menos una hora diaria (siendo optimista), son 5 horas de ahorro de tiempo! • reducción de residuos. sin planificación se acaba cayendo en precocinados poco saludables • dieta mas saludable. si tienes comida casera saludable en casa, comerás comida casera saludable tanto en casa como fuera. si no la tienes caerás en una máquina de vending tarde o temprano.

2.-técnica del batch cooking • lo primero y mas importante es saber que vas a comer durante la semana. personalmente el sábado me siento durante unos minutos a pensar y escribir que quiero comer la próxima semana y hacer una lista de la compra en consecuencia. • normalmente es en domingo cuando hago bach cooking. adapta a tu estilo de vida cuando puedes hacer tanto la planificación como la inversión de tiempo para cocinar. lo mas interesante es que hagas la compra el mismo día o al día siguiente. • a la hora de planificar me aseguro de tener un poco de todo
- crema de verduras
- verduras al vapor (coliflor y brocoli)
- verduras asadas como acompañamiento
- 2 pescados, 1 carne y pollo - legumbres y cereales • una vez tengas todo cocinado, podremos guardarlo tanto en la nevera como en el congelador para ir sacando a lo largo de la semana.
una maravilla de técnica que va a evitar que seamos esclavas de la cocina todos los días!!πŸ˜„πŸ˜„

Moroccan pan roasted chicken thighs - spice rub chicken with smoked paprika, cumin, coriander, cinnamon & cloves. cook med high 3-5 min avocado oil until golden brown. remove and set aside. add a drizzle of oil to pan if needed, sauté onion, garlic, squash, thyme & red chili to taste 3 min. add chicken back to pan along with any juices 1/2 c green olives, a small jar of roughly chopped red peppers and slices of lemon. add organic bone broth or stock and oven roast at 400 for 30-40 min or when the liquid is reduced by half. πŸ‘¨πŸ»‍πŸ³πŸ‹πŸŒΆπŸ₯˜πŸ½πŸ™πŸ» #homecooking #healthyfood #sunday #mealprep #batchcooking #blessed #getinmybelly
