One-pot quinoa dinner 🙌🏻😍 it contains quinoa, black beans, pumpkin, tomato, carrots, tomato paste and lots of spices 🌶🍅🍛 super hearty & comforting meal 😋👌🏻
this is a perfect meal for when you’re too lazy to cook or have no time as all you have to do is add all ingredients into a big p*t and then wait for it to cook for ~30 minutes! perfect for days like today when i’ve been out of the house for 11 hours 🙈had my first day of scuba diving training and it was so cool! thank goodness i was in the pool all day today because it’s 0c outside and i really didn’t want to turn into an icicle ❄️ the fun continues tomorrow 🙃 also really tired now after a long day of diving 😴
Not sure how, but these simple ingredients really just hit the spot for me today. maybe it’s because everything here is super simple, just brown rice, stewed black beans, steamed carrots, caramelized red onions and fresh minced basil. and at the moment i want to clear my mind of any complications and just keep my thoughts as simple as possible. 🌱

1.5 cups quinoa - 12g
1.5 cups peas - 9g
1 cup black beans - 14g
1/2 cup tomato sauce - 2g
1 tbsp nutritional yeast - 3g
about 750 cal.

Viva la mexico 🇲🇽 for real i love me my homemade fajitas what what mexican meal would be right without his side kick el re fried beans! i could eat the whole bowl!
loads of garlic, peppers, onions, beans (obvs), cumin, chilli, smoked paprika and i gotta give tops to coriander and a sprinkle of feta.
i actually skip the wrap and just have all my chicken and veg and...this!

Mexi bean salad
recipe: 1 can sweet corn
1 can chickpeas
1 can black beans
30 ml lemon juice
1/4 c fresh chopped cilantro
3 garlic cloves (minced)
30 ml chilli powder
5 ml smoked chipotle powder
half of a jalapeno (seedless)
30 ml oil (i used canola)
salt to taste
