. 🍃after having been away all last week, i was really looking forward to being at home again for our friday night platter. (i am such a creature of habit!!)😂😂 .
on tonight's platter there's fresh capsicum, 🥕carrot, rocket🍃 and choggia beets as well as a spicy sweet potato 🍠dip and some baked red🌶🌶 jalapenos. i also wanted to experiment with stuffing some of our orange rocoto cilllies... verdict: still very hot despite 2x parboiling first!!🔥🔥 and from the pantry there's olives (the last of last seasons), dried roma tomatoes🍅🍅 and dehydrated pears.🍐🍐🍐 (note to self: need to dry more pears next season... they are super tasty and there's never enough!!)🍐

Combining some foods aid and even amplify the digestion and absorption capabilities. but be wary, some foods do not mix well. like starches and some protein (mostly acidic animal proteins) that may engage the digestive system in a sub optimal way, such that digestion takes longer and is less efficient 🌱 do you eat smart? 💪

Sunday meal prep complete 🙌 stuck with my usual staples for this week, with my fav go-to crockpot chicken and carrots 🥕 to make this, fill the bottom of a crockpot with carrots, place a whole chicken on top, and cook on high for 4-5 hours or low for 7-8 hours. once fully cooked, use forks to shred the chicken meat while it’s still warm. i usually store half in the fridge for the week and freeze the rest 👍
now i’m off to dinner with the fam for my sister’s birthday, hope you all have a great start to the week!

Just a little sneak peek of how i prepare meals for me and my family during the week. at times it becomes overwhelming to cook a full course meal during a busy week, so i know if i have the basics of the meal i'm good.

curry collard greens #crockpot grilled chicken. ( i love utilizing the grill)
and yes i do eat differently. i do low carbs, fruit, veggies and protein. my kids and husband don't lol but i do monitor what and how much red meat and sugar they intake; of course process foods as well #momlife
