Chocolate truffles by @marinadwright 💞🍫😊
250g dark chocolate
150g creamed coconut
1/2 cup hazelnut butter
125g dark chocolate
1 cup roasted hazelnuts
3 tbsp coconut oil
1. in a small saucepan heat creamed coconut and chocolate over low heat until melted. add hazelnut butter and mix to combine. transfer truffle mixture into a bowl and let sit in the refrigerator for about two hours.
2. when truffle mixture has hardened (but is still soft enough to shape) scoop out one tablespoon at a time and form into truffles with your hand. you’ll need to do this step quickly, so they don’t melt in your hand. transfer to the freezer for about 30 minutes.
3. for the chocolate coating, melt chocolate and coconut oil in a small saucepan over low heat. place roasted hazelnuts in a food processor and pulse until you get small pieces. add to melted chocolate and combine.
4. take out frozen truffles and coat in chocolate hazelnut coating with a fork one at a time. place onto parchment paper and put in the fridge for 30 minutes or until they set. enjoy!
🌱 fluffy vegan zebra cake by @laurastencel 🌱
1 ml salt
5 ml baking soda
10 ml baking powder
430 g flour
1/2 dl almond flour
20 g cornstarch
200 g sugar
350 ml plant based milk
115 ml oil
7 ml vanilla extract
1 lemon zests
15 ml apple cider vinegar
150 g melted chocolate (for the cake)
1. preheat the oven 180˚c
grease a loaf pan and dust with almond flour or flour (sometimes i use breadcrumbs). 2. into a bowl place all the try ingredients and stir.
3.then add all the wet ingredients. stir until everything is combined but don’t over stir.
4. in a second large bowl, add half of the batter. add the melted chocolate 🍫 and stri.
5. use separate tablespoons for each batter. and start to spoon 1 large spoonful of the vanilla batter into the center of the loaf pan and then the chocolate batter continue alternating the batters on top of each other until both of the batters are used up.
6. bake the cake for 50-60 min. then allow it too cool of. they pour melted chocolate on top of the cake and leave it for at least on hour !

Chocolate oatmeal by @twospoons.ca!🍫🥣 .
chocolate oatmeal: (serves 2)
1 cup gluten-free large flake oats
2 cups oat milk (or almond milk)
2 tbsp cocoa powder
1 tbsp chia seeds
4 tsp coconut sugar (or brown sugar)
toppings of choice: used here peanut butter, blueberries and chocolate chips
1. in a saucepan combine oats, oat milk, cocoa powder, chia seeds and coconut sugar. whisk to combine and bring to a simmer. let oats simmer for about 5 minutes, or until desired consistency. add splashes more milk if needed.
2. divide chocolate oatmeal between two bowls and add your favourite toppings.

Chocolate-blood orange tart by @esra.tok.vegan 🍊🍫 ingredients for the crust - 80 g (2/3 cup) mixed nuts - 70 g (1/2 cup) oatflour
- 3 tbsp coconut sugar - 2 tbsp cacao powder - 2 tbsp coconut oil - 2 tbsp non-dairy milk
- 1/2 tsp baking powder - 1 blood orange (zest)
ingredients for the filling - 100 g dark chocolate - 150 ml (2/3 cup) soy cream - 2 tbsp maple syrup
- 1 blood orange (juice)
place nuts in a food processor and pulse until ground. add other ingredients and blend until mixture comes together. press the crust into a pie tin and bake for 15-18 minutes at 180 c.
for the filling place chopped chocolate in a bowl
and add heated cream. after 2 minutes mix carefully until all the chocolate is melted. add maple syrup, orange juice, mix well and then pour over the cooled crust. add some peeled and sliced blood oranges on top. chill in the refrigerator for 2-3 hours.

Tom yum noodle soup with fried wontons by @nm_meiyee 🌱 .
ingredients ♥️ fried wontons
1 block firm tofu, mushed
2 tbsp scallion, chopped
2 tsp minced ginger
2 tsp sesame oil
1 tbsp shaoxing wine
1 tbsp soy sauce
2 tsp dark soy sauce
1/4 tsp salt
1/4 tsp ground white pepper .
about 25-30 homemade or store-bought wonton wrappers
♥️ tom yum soup & noodles (serve 2)
2 1/2 cups vegetables stock
1 small galangal, sliced
6 kaffir line leaves
3 stalk lemongrass, bottom white part & cut into strips.
3 tbsp tom yum paste
1-2 small red chilli/ bird's eye chilli, sliced (optional)
100g mushrooms (hon-shimeji/enoki/oyster/eryngii or button mushrooms)
2-3 tbsp fresh lime juice, adjust to taste
1 tbsp sugar
salt and pepper to taste .
2 servings of cooked rice stick noodles
handful of coriander
in a medium bowl, gather the filling ingredients. spoon 1-2 tsp of filling mixture onto the wonton wrapper. fold according to your preference. make sure you seal all along the edges and get any air out. heat up cooking oil in a wok or frying pan and deep fry the wontons until golden brown and crispy. . .
♥️ tom yum soup
add water and lemongrass, galangal, lime leaves, chilli to a boil. cook on low heat until fragrant, about 5 mins. .
add tom yum paste, mushrooms and continue to cook for a few minutes until mushrooms are cooked. turn off the heat, add in sugar, lime juice, and salt and pepper to taste. .
♥️ to serve
pour the tom yum soup over the cooked noodles and topped with fried wontons and some coriander. serve immediately.
A little behind the scenes this morning baking my spelt, rye, and wheat recipe up at my website. a few changes: increased the whole grains by 10% and used @kingarthurflour whole white wheat in place of hard red wheat. upped the hydration a bit (see stories!), lower fdt to 76f, and pushed bulk to 4 hours — a wet and active dough. nice to have a new flock of hearty loaves in the house again to feed the ravenous lot (me included). #baking#bread#sourdough#theperfectloaf

verdict: those are wayyyyyy too many eggs for three people to eat! it was also spicy af but that bit i really enjoyed. we ended up leaving lots of the eggs because that's just too unhealty! 〰️

What an amazing meal at the newly opened bar douro city. we were lucky enough to get a reservation during their soft opening (50% off!), but the food really impressed us and i can’t wait to come back again very soon!
sat at the best seat in the house (kitchen bar), each portuguese dish was better than the next. we started with the 𝗦𝘂𝗰𝗸𝗹𝗶𝗻𝗴 𝗽𝗶𝗴 𝗶𝗻 𝗯𝗼𝗹𝗼 𝗱𝗲 𝗰𝗮𝗼, a little sandwich 🥪 with perfectly seasoned tender pork, with bits of crackling for crunchy texture. it was so good we ordered another one!
another memorable dish was their signature 𝗚𝗮𝗿𝗹𝗶𝗰 𝗽𝗿𝗮𝘄𝗻𝘀 🦐. served in a deliciously garlicky spiced sauce, the maître d’ suggested that we needed more bread 🥖 to go with the dish. and he was absolutely right, let’s just say they didn’t need to wash the dish 😆. the fact the prawn was slightly overdone could be easily forgiven. and you can’t go wrong with 𝗣𝗿𝗲𝘀𝗮 𝗜𝗯𝗲𝗿𝗶𝗰𝗮, the king of meats. i could go on, but i have to give a shoutout to the amazing desserts. the 𝗣𝗮𝘀𝘁𝗲𝗹 𝗱𝗲 𝗻𝗮𝘁𝗮 was great but it’s all about the 𝗔𝗹𝗺𝗼𝗻𝗱 𝘁𝗮𝗿𝘁. sweet and tender in the centre, crispy crust, topped with milk ice cream. would come back just for this alone!
