Happy weekend! sometimes you just need to treat yo self!!! overall i maintain a daily healthy diet but we all need to live a little every once in a while. me and my love for savory would choose a cheesy loaded, crispy bacon packed, egg sandwich over some sweet decadent dessert any day! but that’s just me. i actually only ate half and my son ate the other half because that’s all i needed. what is your favorite indulgence food that you like to stuff your pie hole with?

Have you tried the “split-sear” 🍔🔥 ? wait for it... it’s a game changer ! the meat n’ cheese get a little caramelized, the buttered bun gets a nice toasty char and... it’s still mid-rare inside ! i’ve seen it pop up here n’ there, so it’s nothing new and not my idea, but i discovered how good it is by accident. sometimes my burgers are a bit under/rare for people, so i started throwing them back on the grill. that “serious beef-offal burger” from last week was even a bit rare for me. (i know, imagine that !) i brushed the inside with a little butter and seared it hard and fast. deeelicious ! give it a try on your next burger.

the offal big smoked cheddar burger w/ loads of capers, mayo, wild arugula and dijon on toasty soft grilled brioche... intense beef flavor, super juicy with just a hint of offal (well, maybe more than a “hint”). i’m always game to try something “interesting” and i was so happy to see a lot of you are to. thanks for all the interest in stories and the patty post. i love knowing there’s plenty of offal-eaters out there.

a few days ago, @girlcarnivore asked “what’s in your perfect patty ?”.... well, i found an interesting one ! it’s a grass fed ‘blend’ from @buyranchdirect. it’s 75% beef, 10% beef heart, 10% liver and 5% bone meal. yes, it might sound weird to some... but it’s an offal good burger ! (check stories)

eat to our heart content. find the food here tastes good. enjoyed the peking duck with pancakes - hadn’t had this for sometime already! and the drunken cockles are just addictive.
