You may remember this image from pursuit international volume 1. after a couple of months of ageing, the beef is finally ready for those lucky customers who believe in things being done properly.
the beef came from a dairy cow and will taste amazing. it will be full of flavours and aromas from the cow’s long life grazing in pastures. the meat will be marbled, a result of the cow’s slow, natural growth, active life, age and diet of grass - not pellets full of corn that the cow struggles to digest. the hanging process will have increased the meat’s flavour and complexity.
