recipe here 👉🏻 preheat oven to 180c. carefully separate skin from b****t of a 1.5-1.7kg chicken and stuff it with 2 sliced tomatoes, 1 block of hellim (sliced), 1/2 sliced red onion and 2 tbsp pine nuts, all of which have been previously tossed in 1 tbsp olive oil, 1 tsp each smoked paprika + dried mint, and 1 tbsp chopped parsley (pin down the skin with cocktail sticks if necessary + take care when doing all of this so that skin doesn’t split). dot chicken with butter, season well with salt and pepper and cook for 1 hr 20-30 mins, basting every 20-30 mins or so. meanwhile, heat another tray in oven with 2 tbsp sunflower oil so that oil is smoking, add 1kg parboiled (5 mins) maris piper potatoes that have been tossed in 1 tbsp cornflour and seasoned well, add them to pan and cook on top shelf, turning once or twice, for 45-50 mins. when chicken is cooked, take out, cover with foil to rest for 10 mins, take potatoes out and throw 2tbsp chopped coriander and 4 crushed/chopped garlic cloves into the pan, toss well and take out the potatoes to serve. make a finely chopped salad with 1/4 red cabbage, 1/4 cucumber, 1 red pepper, 4 spring onions, 4 tbsp chopped coriander dressed simply with 1 tbsp each extra v****n olive oil, balsamic vinegar, pomegranate molasses, pinch of salt. incredible. . #homecooked#recipe#homecooking#food#foodie#foodies#foodpic#foodblog#foods#foodgasm#foodlover#foodstagram#foodpics#foodphotography#foodblogger#instafood#foodoftheday#halloumi#healthyfood#foodporn#chicken#roast#roastdinner#roastchicken
