Crispy quinoa and oat coated goujons! all gluten and dairy free of course!! 🍗🙌🏽
half cup of gluten free flour
salt and pepper
4 chicken b*****s chopped into chunks
1 cup cooked dry quinoa
half cup rolled oats (gluten free if preferred)
preheat over to 200 degrees
three simple steps;
roughly coat the chicken chunks in the flour, then the egg and then roll them in the quinoa/oat and seasoning mix.
lay them out evenly onto grease proof paper, spritz with coconut oil and cook for 20-30 mins until golden brown.
enjoy!!! a good tip is to make extra goujons and freeze them on a tray (uncooked), once frozen put them into portion bags for the freezer for midweek convenience or feeding little ones without the faff! tag a friend and share this recipe if you love it! •
