This is a dish we stumbled upon in hawaii, we were kinda hangry and thought "both beef and egg? that can never go wrong!" 😅 and we were right 😎 my husband also read afterwards that loco moco was one of the local dishes you should try while in hawaii, sometimes hanger can lead to good things without you even knowing it 😂 it's actually a really simple dish: hamburger patty, fried egg, rice and some kind of brown gravy. here's how i made it:
loco moco 🥩🍳🍚 minced beef
mushrooms (i used funnel chanterelles (🇸🇪 trattkantareller) simply because i had a lot i'm my freezer, and it turned out great)
veal stock (🇸🇪 kalvfond)
cook the rice (preferably in a rice cooker so you don't have to worry about it 👍). add salt (i think i used a little over 1 tbsp for 1000 g meat) and pepper to the minced beef and knead it with your hands until it's well combined. shape the meat into hamburgers and then fry them in a pan for a few minutes per side to desired doneness. keep them warm in for example aluminum foil while making the rest.
fry the mushrooms in a little bit of real butter until they're nicely colored. pour some white wine and veal stock over the shrooms and let simmer for a little while. taste and add more wine or stock if needed. keep warm while frying the eggs.
