Noodles in a rush food hack alert 😍💥🍜🍃 with spicy korean dressing by @shisodelicious 💚 only need 5 minutes in hot water to be ready, add greens (bok choy, spinach, green beans, peas) to get some quick-blanched veggies in without much extra effort. cool with tap water and spin a salad spinner to remove excess water if you’re thinking of packing it in a lunch box as seen in video. top noodles with all your favorites!
the dressing is spicy korean style:
1 tablespoon gochugaru (korean pepper most famously used in kimchi)
2 tablespoons rice vinegar
4 tablespoons toasted sesame oil
1 teaspoon fine grain salt
optional: 1 teaspoon coconut palm sugar or another natural sugar or suryp
optional: 1/4 teaspoon garlic granules .
method: pour all ingredients in a small glass jar with lid and shake shake shake. keeps for up to a month in the fridge and is delicious on pretty much everything.

Raw carrot cake with wild blueberry cream frosting by @ellenfisher 💙⠀
4 cups carrot pulp⠀
1/2 cup walnuts⠀
1/2 cup raisins⠀
1/2 cup coconut flakes⠀
6 medjool dates, pitted⠀
1 pinky size piece ginger⠀
4 tbsp maple syrup⠀
1 tbsp cinnamon ⠀
3 cups soaked raw cashews, 1 cup coconut water, 1/2 cup coconut meat, maple syrup to taste, vanilla⠀
directions: blend the frosting ingredients until smooth. freeze for a few hours to thicken/harden. food process the filling ingredients. then take the frosting out of the freezer and layer the filling and frosting in a cake pan. top with a layer of frosting that is stirred with wild blueberries. freeze for a few more hours. serve. enjoy! #letscookvegan#feature

Never in my life have i seen anything like this. it’s hard to see certain wildlife when you refuse to support zoos and other forms of animal exploitation but yesterday while sitting at the beach in st kitts, about a dozen or so monkeys just descended from the trees to eat the sugar cane left out for them and it was 100% pure magic. •

Today i celebrate 3 years of being vegan. i’ve been plant based since i was 19 years old never hearing about the vegan lifestyle. in light of the @blackpanther movie which is working to decolonize our minds we need to take the next step and decolonize our food choices because they are killing us! as ron finley says: “the drive-thrus are killing more people than the drive-bys .” go vegan baby!
So interesting to think of it in this way. one of the first things that made me take more awareness of our planet was a teacher saying to my geography class, ‘the earth is dying, therefore you are dying on it!’. what made you realise that we need to better the earth’s health? 🌍🌱
