The latest lunch ever, so it’s basically first dinner. this is a “throw everything leftover in the fridge into my bowl” salad. with carrots, cucumbers, jicama salad (recipe up next week), spicy pan “fried” tempeh (marinaded the same as the tofu daikon noodle bowl, coming soon) and avocado. i added roasted salsa and tofu sour cream when i mixed it all up 👌🏻 so good!
And this is how my experimental #falafel atop a colorful salad with red quinoa, radish greens, lettuce, tomatoes, cucumbers, onions, carrots, hard boiled egg, red cabbage and homemade tzatsiki as dressing, becomes today's lunch.
