Easy roll cake hack⠀
1 cracked chocolate sponge cake, about 6 inches⠀
1 cup milk⠀
1/2 cup dark chocolate, melted⠀
1 cup butter⠀
2 cups powdered sugar⠀
1 tsp vanilla extract⠀
2 tsp milk⠀
2 cups dark chocolate, melted⠀
in a bowl, mash your chocolate cake with the milk and melted dark chocolate.⠀
next, roll out to approximately 10 by 14-inches between 2 sheets of cling film.⠀
prepare your cream filling, and then spread over the cake. roll up from the shorter end, and then set aside as you prepare your topping.⠀
melt the dark chocolate, and pour over the cake. leave to set before scattering with the powdered sugar. ⠀

1 cup unsalted butter
1 cup light brown sugar
1/2 cup granulated sugar
1 large egg
2 teaspoons pure vanilla extract
2 1/4 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon kosher salt
12 ounces bittersweet chocolate chips, plus 2/3 cup for topping
1 cup nutella
ice cream, to serve.
instructions : heat oven to 350 degrees. using a mixer fitted with the paddle attachment, cream butter and sugars together until very light, about 5 minutes.
add egg, mixing well.
stir in the vanilla. stop the mixer and add flour, baking soda and salt. mix until just combined, then stir in chocolate chips on low speed.
spray a 9-inch springform pan with nonstick spray.
add half of the cookie dough to the bottom of the prepared pan and pat down to form an even layer.
spread nutella on top, leaving a 1-inch border. spread the rest of the cookie dough on top in an even layer. pat down. dot with another 2/3 cup of chips. bake for 30 minutes. if cookie begins to get dark, cover with foil, being careful not to touch the chips on top, and bake for 5 more minutes. cool in the pan for 15 minutes before slicing. top with ice cream, if desired.

5 weetbix, (weetabix or wheat biscuits)
1 cup dates (pitted)
1/2 cup sunflower seeds
1/2 cup desiccated coconut
4 tbsp cocoa
2 tbsp water
40g dark chocolate (optional)

place first 7 ingredients in a food processor
blitz until comes together into a ball (takes 3-5 mins)
while food processor is doing its magic line a loaf tin with baking paper
if you have chosen to use dark chocolate on the top, you can also get this melted. i either use a double boiler, or for a small quantity like this i do short 30 second bursts in the microwave on 50% power)
press the mixture into the loaf tin
top with the melted chocolate
refrigerate for 2 hrs
for the crust
6 tbsp. melted butter

for the cheesecake
2 blocks cream cheese, softened
1/2 c. powdered sugar
1/4 c. chocolate sauce
3 hot cocoa packs
pinch of salt
2 c. heavy cream
1 c. mini marshmallows
make crust: in a food processor, pulse oreos until they are fine crumbs. transfer crumbs to a bowl, then add butter and sugar and stir until combined. the texture should be similar to wet sand.
grease a 9" pie plate and press in the crust mixture.
in a large bowl using a hand mixer, beat cream cheese until light and fluffy. add powdered sugar, chocolate sauce, cocoa packets and salt and mix until smooth.
add about half of the heavy cream and beat until smooth. add the rest of the heavy cream and beat until very fluffy.
fold in mini marshmallows. pour cheesecake mixture into the prepared crust.
freeze until solid, about 4 hours.
for the cookies
2 1/2 sticks unsalted butter, softened
1 c. brown sugar
1/2 c. granulated sugar

for cream cheese filling
12 oz. cream cheese, softened
1/2 c. powdered sugar

preheat oven to 375º and line a large baking sheet with parchment paper.
make cheesecake filling: combine cream cheese, powdered sugar and salt in a small bowl. mix well until mixture is smooth. cover with plastic wrap and refrigerate until slightly firm, about 30 minutes.
make cookie dough: using an electric mixer, beat butter and sugars until light and fluffy, about 2 minutes. slowly beat in vanilla extract and eggs.
in a separate bowl, mix flour, baking soda and salt. stir into butter-sugar mixture. fold in chocolate chips.
make cookies: scoop about a tablespoon of the cookie dough and flatten into a flat, pancake-like circle. spoon about 2 teaspoons of the cheesecake filling in the center. form another tablespoon of cookie dough into a flat circle and place on top of filling. pinch the edges together to seal, then roll the filled dough into a ball.
bake cookies for 12 to 15 minutes, or until lightly golden.

demerara sugar is made from sugarcane, composed of large grains and is light brown in color due to its natural molasses content. it's less processed than regular, white sugar and retains trace amounts of vitamins and minerals.
though demerara sugar may be slightly healthier it should still be used sparingly.
