Beans, beans good for the heart…
1 tbsp olive oil
1 red onion, finely chopped
125g smoked bacon lardons
2 cans haricot beans
400g cherry tomatoes in juice
2 tsp smoked paprika
1 tbsp treacle
1 tbsp brown sugar
1 tbsp worcestershire sauce
2 tsp english mustard
1 tbsp cider vinegar
4 chunky slices of sourdough, to serve
1. heat the oil in a large pan and fry the onion and bacon for 3-4 minutes until crisp. add the rest of the ingredients apart from the bread. simmer over a medium heat for 15 minutes until the sauce has reduced and season with black pepper.
2. when the beans are almost cooked, grill the bread on a griddle pan. serve the beans over the toast.
