No dinner plans? here's one for you: cauliflower crust pizza with roasted veggies and homemade vegan mozzarella cheese. let's get cooking!👩🍳🍴🍕
vegan mozzarella recipe:
1/4 cup raw cashews
1 cup hot water
2 t + 1 tsp tapioca starch
1 t extra v****n olive oil (optional)
1 small garlic clove, minced
3/4 tsp sea salt
1 tso fresh lemon juice
blend all ingredients together in a high-speed blender until completely smooth for approx. 1 minute.
pour into a small saucepan and cook, stirring constantly over medium high heat. after a couple of minutes the mixture may start to look like it’s curdling or separating. this is totally normal, reduce heat to medium and keep stirring so you don’t burn the cheese to the bottom of the pot.
keep cooking and stirring until it's really thick (about 2-3 more minutes) and the mixture becomes like a cohesive mass of melted dairy cheese

I don’t know if it’s the extreme cold in nyc, the recent move, or the fact that my roommate has been traveling a lot recently, but i’ve spun quite a lil self-soothing cocoon over the past few weeks. inside the cocoon, leggings and turtlenecks are all the rage, baths are a daily occurrence, and all entertainment is familiar/nostalgic. (currently rewatching grey’s anatomy from season 1, wassup?) most importantly, food in the cocoon is exclusively of the fuss-free, comforting variety—mostly one-pot wonders like this mexican sweet potato and black bean stew, which is on the blog right meow. follow the link in my profile and to simmer it in your cocoon. ❤️ .
Fish friday y’all!!! are any of you trying to eat more sustainable fish this year?
i never eat as much as i’d like. i feel like whenever i make fish i’m always telling myself to buy it more often.
this thai roasted grouper was so fantastic. the fish is simply seasoned with salt, pepper and a bit of avocado oil, then roasted. it’s so easy and fast. then there’s the sauce. omg, it is so good - onions, red bell pepper, ginger, red curry paste and coconut milk! then served over brown rice, and topped with cilantro and lime squeeze.
i think i could eat this every. friday. night! ✨🐟✨
