Coming from the small town of minori, part of the amalfi coast (unesco world heritage site), #ndunderi are said to be known since the romans and are traditionally prepared for the patron saint trofimena's day (july 13th), but really they're on the tables at every occasion.⠀
originally made with spelt flour and curdled milk, they're nowadays prepared with #ricotta (in this case i used buffalo milk ricotta), flour, a bit of parmigiano, eggs and a hint of nutmeg ✨⠀
here i served them with zucchini, #stracciatella (yes, burrata's mindblowing filling), chives and a good amount of lemon zest 🍋 to honor the great excellence from the area that beautifully shapes the coast with endless terracing gardens and whose scent permeates the air ✨⠀

Cucumber dill salad is such a staple in our fridge during the summer. for snacking, i’ll eat cucumbers with peel on, but for this salad, i like them peeled, sliced, and sitting in a colander with salt for a bit. from there it’s a simple vinegar situation (sometimes a combo of white wine vinegar, rice vinegar, or apple cider vinegar) with fresh dill. occasionally a pinch of sugar. and maybe thinly sliced onions. how do you cucumber salad?

yes i need a very very strong cup of tea and the reason behind this cup of tea is “kalu”. he didn’t let me sleep last night,he stated barking around 11pm and went on till 12.30am and again around 3am. there is a sudden increase in numbers of leopard around and every night they visit our village. in just 20 km of radius there are 7 adult leopards and few of the female leopards has given birth to cubs. they are in constant look out for food and visiting our village every night is not a new thing but surprise visit during day time is a matter of concern.

I made mücver (courgette fritters) with my last two yellow courgettes. they’re scrumptious!! my fritters are packed full of flavour and i couldn’t wait to share my recipe with you. these are ideal if your planning a picnic, a snack, or have them for breakfast.

1 crushed garlic cloves
1/2 tsp black pepper
1/2 tsp pul biber
salt to taste
2 finely sliced spring onions
handful of chopped coriander
2 lightly whisked eggs
90g self raising flour
sunflower oil to fry
grate the courgettes and sprinkle with a little salt and set aside for around 15 minutes. squeeze to remove the liquid. once the excess water has been removed, add flour, salt, pepper, pul biber, spring onions, eggs, coriander and crushed garlic to the courgettes. give it a good mix until the ingredients are combined. heat some oil into a frying pan. add a spoonful of the mixture into the oil and fry until golden brown on both sides. drain the fritters onto a kitchen towel and enjoy with your favourite dip!

the first time @nomanjd and i went out for lunch, he got me a caesar salad. i let him order at his own discretion because i didn't know what was good at that canteen; i volunteered to get us a table instead. i wasn't also terribly hungry and trusted that his taste wouldn't be beans on toast or ketchup on a hotdog.
he knew i liked cheese but preferred to eat healthily, so he got the toppings and the dressing on the side. parmesan and caesar salad dressing (hello, anchovies!) i love, but lettuce? 😬 at my office desk, it would take me anywhere from 45 minutes to 2 hours to chomp through the lettuce in any salad. it's tasteless and adds bulk without substance. if lettuce were the size of croutons and served to only add some crunch, i'd like it so much more.
in this caprese-inspired salad, i swapped out the sweet basil with flat parsley so i could clear out the vegetable bin in our fridge. @nomanjd said he considers this beneath the curly parsley in grace and taste.
in conclusion, it's a good thing salads aren't a part of our everyday meals. 🙂

Cookies au beurre de cacahuetes prets en 2 minutes - cuit en 12 minutes. pourquoi se priver ?
la recette inspiree de @savory.tooth
250 g de beurre de cacahuètes crunchy et salé
2 cuillères à soupe bombées de sucre complet type muscovado
2 cuillères à soupe rases de farine de coco
1 gros oeuf
melangez tous les ingrédients. sur une plaque recouverte de papier cuisson formez à la main 18 boules de la taille d'une grosse noix. applatissez les legerement à l'aide d'une fourchette en formant des croisillons. enfournez à four chaud 180 degrés pour 12 à 14 minutes. ils seront un peu mous à la sortie mais ils vont durcir sur les bords....
totalement addictif et si vous remplacez le sucre complet par un sucre type erythritol vous obtenez des cookies low carb. facile.

🇺🇸 muffin with cherry and cocoa
• 3 eggs 🥚
•4 tablespoons of honey 🍯
• 1 small glass of milk 🥛
• 2 tablespoons of yogurt 🥣
•100 ml olive oil
•40 cherries (we take out the beans) 🍒
•6-7 topping tablespoons of purple wheat flour
• 80 g white chocolate chips
•2 teaspoons of cocoa 🍫
•1 pack of vanillin
•1 packet of baking powder
1- we mix the egg with honey well.
2- we add milk, yogurt and olive oil and continue to whisk.
3- we add the water from the sour cherries we extracted to our mixture.
4- we add flour, cocoa, vanillin and baking powder and mix.
5- when our charge is at full consistency, we add white drops of chocolate.
6- we prepear our muffin container by covering oil.
7- we put 2 spoons our mixture and, put the cherries in the middle and again mixture on top again.
8- we add white drops of chocolate on top.
9- while making the tiny muffins, we put the cherries on top of it and the chocolate chips.

smoked salmon and scrambled eggs. one of those partnerships that works as well together as arsenal & the fa cup, only this time i added it with the cream cheese i brought over from the butchers that make it in germany. they seem to do things better over there on a number of things (we won’t get political) including their fresh bread too. but this is one of my all time fav breakfasts to enjoy regardless.
Infused waters are a deliciously healthy way to stay hydrated and the flavor combination of sweet cherries and lemon will keep you coming back for more.
i am obsessed with infused waters and am always looking for new flavor combos. they are a great alternative to sodas (or sweet tea… that’s my vice) and for me, an incentive to drink more water. like many people, i struggle to stay hydrated, so i welcome any help.
this cherry infused water combination is our favorite when sweet cherries are in season. it’s a great way to use one of nature’s great gifts. the lemon pairs perfectly, and because fresh mint is readily available at the same time as cherries, it can be a wonderful addition, also.
Что делать со второй частью крыжовника вопрос даже не стоял. Конечно же, это должен был быть соус. Сейчас самое время ягодных соусов, на любой вкус, а уж как они хороши к горячим блюдам, да к мясу на углях, можно даже не рассказывать. Кто-то спрашивал куда добавлять малиновый уксус, так вот в таких соусах ему самое место. Сразу предупрежу - никаких заготовок с соусами я не делаю, приготовили-съели, поэтому рекомендаций по хранению нет. Да и сохранить такую вкуснятину вряд ди удастся, сколько бы не сделал - улетит в миг 👍🏻
180 гр крыжовника
50 мл коньяка
2 ст ложки меда ~ 50 гр
20 мл малинового уксуса или другого
соль и розовый перец по вкусу
1 - крыжовник помыть и очистить от хвостиков, залить коньяком и варить на среднем огне 10 минут
2 - пробить в блендере до однородного состояния
3 - добавить мед, малиновый уксус и щепотку соли с розовым перцем
🔘 можно использовать для соуса любые ягоды, как и свежие, так и замороженные

Seared salmon chunks on brown rice😍
oily fish are high in omega 3 fatty acids which are crucial for the brain as they can ease depression and anxiety. they can also reduce risk of heart disease, maintain eye health, reduce inflammation, improve bone and joint heath, aid sleep, improve skin health.
one of my rituals is needing something sweet right after a meal. both my dad and my husband have caught me sneaking into the fridge (sometimes at midnight or even in the wee hours of the morning) mostly for that little sweet temptation. (in retrospect so were they)😂
nonetheless, i’ve tried countless recipes to get one that’s easy to do, has no whipping required and is melt-in-your-mouth without being too crispy.
i like my cookies dough-like. this is a no fail recipe and it takes hardly any time.
give it a go the next time your inner cookie monster beckons!
sugar - 1/2 cup
butter - 1/2 cup
egg - 1 no.
honey - 1 tbsp
nutella - 1 tbsp
vanilla essence - 1/2 tsp
flour - 1 cup
baking powder - 1/2 tsp
salt -1/4 tsp
chocolate chips - you can never have enough. (ideally 1 cup)
chopped chocolate- optional
take the sugar, butter in a bowl and mix really well with a spatula. c***k an egg into the bowl and mix with the spatula until it’s mixed quite well.
add the vanilla essence, honey, nutella and combine everything. after it’s mixed thoroughly, add the flour, baking powder and salt. mix until just combined.
do not over mix. add the chocolate chips and chopped chocolate into the mixture.
preheat the oven to 190°c.
using an ice cream scoop or using your hands roll out into small balls and place on a flat pan. if you want cupcake cookies, spray the cupcake moulds with baking spray and pour the dough into them. (swipe for image).
bake for 10-12 minutes.
let it cool for 5 minutes and devour them in a single bite.

one of the most versatile ingredients and something we always seem to run out of. this doesn’t take very long and is really light on your tummy.

turkish poached egg
olive oil - 1 tbsp
butter - 1 tbsp
red chilli flakes - 2 tsp
cumin/ cumin powder - 1 tsp
red chilli powder - 2 tsp ( can reduce if you want it to be less spicy)
garam masala - 1 tsp
egg - 1
lemon- 1 tsp
vinegar - 1 tbsp
salt - to taste
curd - 1/2 cup
finely chopped garlic / garlic paste - 2 tsp (3 garlic cloves) - can reduce if you don’t like garlic.
parsley/ corriander for garnish
first brown the butter. add olive oil, cumin powder, red chilli flakes and red chilly powder. sauté well. leave the spicy sauce aside.
crack the egg into a ramekin bowl. add lemon juice. in a pan add water, very lightly salt it. add vinegar. once it simmers (not boils) , you can either add an egg directly to it or take a spoon and swirl it around a bunch of times (optional but highly recommended). drop the egg in one swift motion and cook it for three minutes.
switch off the heat and leave it in there for another five minutes (you can leave it for longer if you want your eggs well cooked). in another bowl, take yoghurt. add garlic, salt. beat well. place this on the bottom of the serving dish. remove the egg with a slotted spoon to remove the extra water and place it gently on top of the yoghurt.
chop corriander, parsley and one mint.
add the spicy sauce on top.
