Sprouted mung beans 🌱

the humble mung bean part of traditional ayurvedic diets used for food and medicinal use in india for thousands of years. so versatile as they can be used in so many dishes such as soups, curries, stir fries and salad.
here i've sprouted them and added them to gently warm through with sauteed onions and mild spices.
mung beans offer a good amount of protein meaning they will keep you fuller for longer and are a high source of other nutrients such as b vitamins, zinc, folate, calcium, magnesium and potassium.
of note are the b vitamins, including vitamin b6 and folate which are both important in controlling hormone fluctuations that can lead to p*s symptoms. b vitamins, folate and magnesium are useful nutrients for lowering the severity and pain associated with p*s cramps, headaches, mood swings, fatigue and muscle pain.
did you know there are dynamic changes within in the mung bean related to their biological activities when they under go the sprouting process? yep that's right! studies have shown that sprouting improves their nutritional and medicinal qualities such as increasing their antioxidant, antimicrobial, anti inflammatory, antidiabetic and antitumor effects.

Don’t let the label fool you. this isn’t gt’s kombucha, and it’s definitely not a “spring edition”. i’ve been experimenting with homemade kombucha lately, and this apple cider flavor is one of my favorites. 🍎 if you brew kombucha at home too, you can make this flavor by adding about 1/4 of a diced apple, 8 cloves, and 1 cinnamon stick to a bottle of your second ferment. i’m loving it on this rainy & gloomy fall day. 🌧

🍗 chicken tagine 🍗 ⁣

this simple one p*t recipe is perfect for people that don’t have much time to cook 👩🏽‍🍳 plus it’s loaded with protein, fibre and vitamins 👌🏽⁣

for vegetarians/vegans you can replace the chicken with beans/pulses 😋⁣

ingredients ⁣

▪️600g chicken thighs⁣
▪️1 tbsp harissa paste⁣
▪️1 onion, sliced⁣
▪️2 garlic cloves, crushed⁣
▪️1 tsp ground cinnamon/ground cumin/ground ginger/ground turmeric/chilli flakes⁣
▪️450ml chicken stock⁣
▪️5 pitted dates ⁣
▪️1 x 400g tin chopped tomatoes⁣
▪️1 x 400g tin chickpeas, rinsed, drained⁣
to serve ⁣
▪️3 chopped carrots ⁣
▪️coriander, toasted almond flakes, cous cous ⁣

method⁣

▪️mix the thighs with the harissa paste in a bowl until well combined. cover with cling film and chill in the fridge for two hours.⁣
▪️heat the coconut oil in the base of a tagine dish, or heavy-based casserole dish. fry the chicken for 2-3 minutes⁣
▪️remove from the dish using a slotted spoon and set aside. ⁣
▪️fry the onion for five minutes, or until soft. stir in the garlic and spices.⁣
▪️add the meat back to the dish, along with the stock, dates and tomatoes⁣
▪️season with salt and freshly ground black pepper. bring to the boil, cover with the lid and simmer for one hour. (add the chickpeas and carrots after 45 minutes and stir until well combined.)⁣
