Breakfast combo on repeat 💯 another egg breakfast plate at the beach this morning 🙆🏼♀️ added in some leftover sweet potatoes for some carbs and some avo for some healthy f*t plus paired it with a little fruit and leafy greens 🤗 hitting all the bases with this plate 🙌🏻 not pictured is the other egg i had and a few more sweet potatoes 👌🏻 that’s why i always say to try your best not to compare yourself to people, you never know what they’re actually eating/not eating! sometimes i eat more than i post and sometimes i eat less 🤷🏼♀️ gotta do you and try your best to remember every person is so incredibly different 💕this plate hit the spot this morning before our last day at the beach 🏖 we leave early tomorrow morning so i’m trying to soak up all the beach time i can today!! getting a short morning run in before heading to spend the rest of the morning in the ocean 🌊 going to try and convince eli to build a sandcastle with me but idk if that’s going to happen 😂 worth a shot though 😉 happy friyay friends!! ————————————————————————————— #breakfast details 👉🏻 1 egg fried with @traderjoes everything but the bagel seasoning + sweet potato chips (did these differently this time because i didn’t have much time and i put them on broil in the middle shelf for about 10 mins, cooked them all the way!) + sautéed spinach + strawberries + avocado 🥑

Can these be my galaxy overnight oats?! 🌌 i used @suncorefoods blue butterfly pea superjuice powder to give my protein-packed berry vanilla chia oats some blue loooove 🦋💙🦋 and i used homemade h**p milk, which is super easy to throw together 🙌🏼 happy friday, friends! #ad#suncorepartner#suncorelife .
1/2 cup @suncorefoods organic hulled h**p seeds
2 cups filtered water
dash of fine sea salt
berry vanilla overnight chia oats
1 1/2 cups h**p milk
1 serving @suncorefoods vanilla açaí protein shake
1 tsp @suncorefoods blue butterfly pea superjuice powder
1/2 cup blueberries
1/4 cup maple syrup (or less, to taste)
dash fine sea salt
1/2 cup old-fashioned oats
3 tbsp chia seeds
1. prepare homemade h**p milk by blending h**p seeds and water. if desired, strain milk (i didn’t strain mine)
2. blend 1 1/2 cups h**p milk with protein shake, superjuice powder, blueberries, maple syrup, and salt
3. in a medium bowl, mix berry milk mixture with oats and chia seeds. give a quick stir and refrigerate. after 30 minutes or so, stir your oat chia mixture and return to refrigerator until morning
4. serve and top with your fave toppings - i did honey (mixed with a bit of superjuice powder!), coconut flakes, cacao nibs, and frozen blueberries. you will have extra h**p milk, so you can add more milk to your bowl if desired 💙

good morning friends it’s been too hot to make oatmeal these days so instead i soaked @mylklabs roasted almond & himalayan sea salt oats in almond milk overnight and ate it in the morning with my favorite toppings. oh also made chocolate nicecream (blended a frozen banana with cacao powder until smooth) and swirled it all together in the bowl. cold, creamy and satiating.

Greek chickpea salad is yummy and healthy! 😛
for the dressing;
1/3 cup olive oil
3 tablespoons red wine vinegar
1 teaspoon minced garlic (or 1 large garlic cloves, minced)
2 teaspoons dried oregano (plus extra to serve)
1/4 teaspoon salt
for the salad;
1 large cucumber, halved lengthways and sliced
10 ounces (300 g) grape tomatoes (or cherry tomatoes), halved
1 green pepper (capsicum), deseeded and sliced
½ red onion, sliced thinly
14 ounce (400 g) can chickpeas washed and drained
10 ounces (300 g) pitted kalamata olives
3.5 oz (100 g) good quality creamy feta cheese

Cactus slaw. yay or nay?
i wanted a creamy texture and crunch, with some savory vinegar spicy kick. this hit the spot. shred one head of cabbage and 3 carrots, mix in one drained jar of nopalitos (shredded and pickled cactus 🌵 ) and one can of green beans. mix with 2 tbsp vegan mayo, pinch of garlic powder and a little splash balsamic vinegar. salt and pepper to taste. cooling and savory on a hot summer day.

Rainy sundays call for creative kitchen adventures! i recently picked up the cook book "eating from the ground up" by @alanachernila and there are lots of wonderful ideas on there, including a grilled summer squash with basil ricotta recipe! i made this #dairyfree by using tofu ricotta and it came out great! this is a great recipe for summer bbq or family dinner and is best served and eaten immediately. if you are looking for a new way to prepare grilled veggies this is the recipe for you! basil and summer squash courtesy of my @farmerdavescsa csa! *******************
1. marinade squash slices in a mix of 1 tbsp balsamic vinegar, 1/4 c. olive oil, 1 tbsp acv, 1 tbsp liquid aminos (i use that instead of soy sauce), and tsp salt for 30 minutes.
2. prep ricotta: i used tofu ricotta but regular will also work if you are not dairy free. mix 8 oz ricotta with juice and zest of 1/2 lemon, 2 tbsp olive oil, and tsp salt. chop and mix in 1/4 c. fresh basil leaves.
3. grill squash slices (3-5 min per side or until tender)
