I took a few days off from posting here as mentally i really needed a break. but i’m back with this cookie dough chocolate fudge cake. it’s as decadent as it sounds. it’s cold, no bake and definitely reserved for special occasions. even if that special occasion is just craving chocolate 🤣🍫
while very indulgent, it is made from whole foods and no added oils or refined sugar. vegan, gf and just 7 ingredients (+salt)!

yes, i tricked you!! 😉 i used rambutan shells as vessels instead of real sea urchin shells. there were three things that i was so terrified of eating when i was very little. 1. bananas seemed a gigantic worm 2. fig newtons: my dad told me it was made by ants. 3. rambutans seemed a scary monster’s egg.
of course, i love all of them now and i buy them all the time.😉
my dad took me on all of his fishing trips, and we saw the star wars movies at the theater without my brother. still don’t know why... he taught me so many things... how to fight(never happened in real life), how to use chopsticks properly, how to enjoy juicy& bloody steak, different texture/taste of sashimi(my mom was a vegan), how to draw, paint, ... and the most important thing: how to become a independent sassy girl!!!😎

What day is it? it’s pork chile verday!!!🤣 this fresh pork chile verde dinner consisted of hand cut pork shoulder marinated together with carmelized onions and infused with flavors of cumin, garlic, and herbs😃🍽 the pork was then slow cooked into roasted poblano + tomatillo peppers with a slight hint of jalapeño😼💯 paired this saucy entree with homemade cilantro lime rice, organic black beans, fire roasted salsa, a flour tortilla, and a number of other toppings including cheese, red onions, olives, sour cream, avocado, and lettuce😛😛 everything came together wonderfully — such a delightful meal made by me and neil🤠🌟

On my plate tonight: pad thai! i pressure cooked the chicken b****t in my instant p*t with the sauce and it was *chefs kiss* . mixed in some bell pepper and carrots for some veggies.

Prawn ambot tik x guajillo - here is the final version of our dish using our ambot tik x guajillo simmer sauce (coming soon).
our version here is plated with the prawns (scorpion style) on the ambot tik sauce/gravy with curry leaf oil and raspberry tamarind balsamic reduction.
the flavors here are nutty (coconut), spicy (chillies), acidic (vinegar, tamarind) & a hint of sweet (balsamic) balancing the dish. the sauce works best with seafood and if one really wants then you can use vegetables with it as well.

Today was quite an eventful day!🤪 we lost power due to the big storm and a bunch of trees fell on our property but of course i found a way to make healthier eggplant parm😂 whenever i’m stressed i tend to cook/bake because it brings me joy and is so calming😌 today i made my healthier baked eggplant parm using @hukitchen crackers as breadcrumbs and it was a crowd pleaser🎉 the eggplant got so crispy in the oven and i only used a little @primalkitchenfoods avocado oil spray! nothing fried over here!
✨healthier baked eggplant parm (gluten free, grain-free)✨
1 large eggplant, cut into 1/2 inch thick rounds
1 bag @hukitchen crackers, crushed into “breadcrumbs”
1 cup tomato sauce (i used @raoshomemade )
8 oz. fresh mozzarella, sliced thin
salt & pepper to taste
directions: preheat oven to 450 degrees. line 2 large baking sheets with paper towel and spread the eggplant slices on the sheet. season the eggplant slices generously with salt to remove the liquid. let sit for about 45 minutes, then dry with paper towel. press down on each slice to remove any excess liquid. transfer to a plate.
line 2 baking sheets with parchment paper and spray with non-stick spray. in a shallow bowl, beat the eggs together and season with salt and pepper. separately, take your box of @hukitchen crackers and place the crackers in a blender. pulse a few times until the crackers break down and resemble breadcrumbs. pour onto a plate and set aside. feel free to add some parmesan cheese to your breadcrumb mixture for more flavor!
using one hand, dip the eggplant slice into the egg, coating both sides and transfer to the breadcrumb mixture. press the eggplant into the breadcrumbs and flip to coat both sides. repeat until you’ve finished all the slices. place on the prepared baking sheet and spray the tops with oil. bake for about 15 minutes, flipping halfway.
remove from the oven, scoop a spoonful of the tomato sauce on each and top with mozzarella. i like to make little stacks with 2-3 eggplant slices! once you’ve completed, place back in the oven for 5 minutes until the cheese is melted. top with fresh basil and parmesan! enjoy!

I celebrated national chocolate chip cookie day with something a little different-- salted caramel chocolate chip cookie butter.
ok thats a mouthful. but really, whoever invented cookie butter is a genius. have always wanted to try it, but the store bought ones are off limits for me as they aren't gluten free. so i decided to pick one of my best cookie recipes and put them to work.
the star of this recipe is @dvashorganics date nectar, (#gifted) which i used to make my salted caramel sauce. then i blended it up with some chocolate chip cookies and the result was this creamy cookie butter spread. perfect as a spread for toasts, fruit, ice cream topping, or sandwiched between cookies 🍪
