no hot chillies in or on this meal. every now and then i like to venture off to the other side and see how the other half live.
i think i prefer the hot chilli side.

I’ve just started making some of our old favourites for dinner and this is one of them - forgot how good it is - and simple too! warm salad of marinated lamb tenderloin with roasted zucchini, asparagus and pumpkin and a balsamic dressing. healthy and delicious! 🥗 💚⠀
1/2 tbsp. olive oil⠀
1/2 tbsp. balsamic vinegar⠀
500gm lamb tenderloin⠀
300gm butternut pumpkin, cut in to 3cm wedges small bunch asparagus, trimmed, cut in to thirds 1 small zucchini, cut in to 4cm slices⠀
1/2 red onion, cut into thin wedges⠀
30gm baby rocket leaves⠀
20gm feta cheese, crumbled⠀
preheat oven to 200c.⠀
whisk oil, vinegar, salt & pepper in a bowl. add the lamb. turn to coat. cover and refrigerate.⠀
line a large baking tray with baking paper. place pumpkin on baking tray, spray with oil, season, and roast, turning once for 35 minutes or until golden and tender.⠀
meanwhile, preheat a bbq grill on medium-high heat. lightly spray asparagus, zucchini and onion with oil. season with salt & pepper. cook for 3-4 minutes or until tender. remove to a large serving bowl.⠀
remove lamb from marinade. bbq for 3-4 minutes on each side for medium, or until cooked to your liking. transfer to a plate, cover with foil and stand for 5 minutes. cut in to slices.⠀
add rocket, feta and pumpkin to onion mixture. toss gently to combine. place salad on serving plates. top with lamb and serve.
