Not only is this breakki so delicious, it is so easy to make and eat on the go๐Ÿšด๐Ÿป‍โ™€๏ธ between visiting a friend who is a patient in the hospital (who is doing much better and will likely go home today๐Ÿ˜Š๐Ÿ˜˜) and going to work at the hospital, i was able to make this in under 5 minutes and it is so yummy!! happy presidents’ day! โค๏ธ . in a mason jar layer blueberries, @siggisdairy vanilla yogurt, @paleopassionfoods chocolate paleo granola+ @siggisdairy plain yougurt + @vitalproteins collagen powder. enjoy on the go! ๐Ÿ˜‹

Kale cashew caesar with tempeh, avocado, roasted chickpeas and grape tomatoes, and vegan nut ‘parm.’ who needs real caesar after this? ok, real caesar is still amazing (jk ceasar gods) and will continue to live its legacy in full glory, but this nut-based version is pretty amazing on its own! recipe below and step by step in story highlights. happy meatless monday. yay plants! . ingredients for the salad (makes 2): - 1 large bunch of kale - 1 avocado - 1 package of tempeh (i used lightlife organic soy, 8pz) - 1 can of chickpeas (with spices: paprika, cumin, turmeric) - 1 container of grape/cherry tomatoes - 4 tbsp of olive oil for roasting . for the dressing: - 1 cup of cashews soaked for a few hours in warm water (ideally 6-8, but an hour will do in hot water) - 1 tbsp of maple syrup - 1 tbsp of tamari soy sauce (i used low sodium) - 1 tbsp of dijon mustard - 1 tbsp of tahini - juice of 1 lemon (or lime works fine too) - salt and pepper to taste - some water for thinning . for the nut parm: - 1/3 cup of pine nuts - 1 tbsp of raw sesame seeds - 2 tsp of lemon zest - 1/2 tbsp of nutritional yeast . . preheat oven to 400. slice grape tomatoes into halves, toss with salt pepper and 1/2 of the olive oil and layer on the baking sheet. bake in the over for about 30 mins, or until they’re slightly browned and deflated. in another baking sheet, toss the chickpeas with spices, salt pepper and the rest of olive oil and bake until crispy, about 20-25 mins. once both tomatoes and chickpeas are done, set aside. cut kale in small bite size pieces and remove the hard stems. use the juice of one lemon all over the kale to soften it out a bit. set aside. to make the dressing: drain and rinse cashews and mix in a blender until smooth with maple syrup, tamari soy sauce, mustard, lemon juice, salt and pepper. blend until the consistency is light and creamy and drips easily from a spoon. add some water if necessary to reduce thickness. to make the nut parm: in a food processor or blender again, mix pine nuts, sesame seeds, lemon zest and nutritional yeast until crumbly. set aside. mix kale and dressing well until it’s fully incorporated. top with tomatoes, chickpeas and avocado.
