🍕it’s pizza (muffins) for breakfast🍕 cold pizza’s gluten-free, paleo, vegetarian cousin. made with ground almond “flour”, 4 eggs, and any veggies of your choosing. these lovely beauts have chopped green olive, mushrooms, and sun-dried tomato baked in the middle and they are delicious! i made mine with real parmesan so they aren’t technically true “paleo” but they can be made with vegan cheese and you’re good to go👌🏻 shout out to @eatburnsleep for the inspiration of these delicious morsels. i’m soooo happy i discovered you and your yummy recipes! 🍕 head over to her website for the original recipe! the recipe below is what i did:
•1 1/2 cups ground almond meal
•4 eggs, whipped in the blender
•1/2 tsp baking soda
•1/2 tsp sea salt
•1/4 tsp oregano
•1/2 tsp basil •1/2 tsp garlic powder
•pinch of pepper
•1/4 cup parmesan (or vegan mozz)
•1/4 cup chopped green olives
•1/4 cup chopped mushrooms
•1/4 cup chopped sun dried tomatoes
•1/3 cup store bought marinara or 2 tbsp of tomato paste
-preheat oven to 350 f
1. combine eggs, almond meal, salt, pepper, oregano, basil, garlic powder, and baking soda. mix well.
2. add in the marinara or tomato paste and parmesan. once mixed, fold in the mushrooms and green olives (or desired veggies of your choice).
3. grease a muffin tin and pour in the mixture. bake at 350 f for 25 mins. enjoy as breakfast or eat as lunch with a side salad 😋

God d**n these jalapeño wings and skewers are the bomb paired with a nice glass of whiskey. lol, anything with whiskey is good though. wings were crispy and juicy just the way i love them with great kick. my fave skewer was the pork belly. i need to come back for their tacos tho...
First hot day in a while meant that all i was craving tonight was a big raw salad full of all the veg🙋🏼♀️👉🏻bed of chopped romaine + steamed broccoli & green beans + lil bit of pitaya + carrot sticks + bell peppa + @hilaryseatwell adzuki bean burger (haven’t had won of these in so long!! best flavor by far) + 1/4 🥑 mashed & mixed with 1-2 tbsp @hopefoods kale pesto hummus🤤this meal was literally huge but didn’t leave me feeling weighed down or any of that bad stuff🙅🏼♀️hope everyone had an awesome wednesday😋❤️
