We've shared quite a few times our ideas for beetroot and goats cheese combination. for today's dinner we decided to pair our favourite beetroot with bleu cheese and that's how the beetroot quiche idea came up ๐Ÿ‘๐Ÿง€๐Ÿฝ๏ธ (and it we had one casualty in process! our favourite p*t is dead ๐Ÿ˜Ÿโšฐ๏ธ lesson learned - don't watch movie and cook at the same time ๐Ÿ˜‹) dough:
250 g flour
150 g cold butter
1 egg
salt, pepper, garlic

combine all ingredients and put the dough in the fridge for an hour. then roll the dough into a circle and place it in the mold (24cm diameter; we used silicone mold so it didn't need to be buttered). put a baking paper on the dough and fill it with soy or rice, so the dough won't grow. bake it in 190 °c for about 15 minutes.

filling:
6 small beetroots (6-7cm diameter)
handful of spinach
80 g bleu cheese
200 ml 30% cream
1 egg
2-3 tbs grated mozzarella
2-3 tbs vinegar
olive oil
parsley (green part)
salt, pepper, thyme, nutmeg

cook beetroots for about 1 hour (if you like your beetroots to be al dente like we do ๐Ÿ˜‰ if not, try a little bit longer). let them cool down. peel the skin off and grate them (not too fine). simmer beetroots on olive oil with vinegar, salt, pepper and thyme. cool them down. mix cream with egg, add nutmeg and finely chopped parsley. combine that mixture with beetroots and pour that on the dough. chopp spinach, cut cheese in cubes and sprinkle them on the tart. bake in 175 °c for 20 minutes.

Tu es aime le goût du curry et le gingembre ensemble ? il faut absoluement que vous essayez ce délicieux velouté aux carottes et patates douces.
il vous faut :
๐Ÿœ 3 ou 4 carottes.
๐Ÿœ 3 patates douces.
๐Ÿœ 1 oignon.
๐Ÿœ 1 tasse de bouillon d'os ou de poulet.
๐Ÿœ 1 c.à.café de curry en poudre.
๐Ÿœ 1/4 c.à.café de gingembre en poudre.

les étapes :
๐Ÿฅ„ pelez les carottes, les patates douces et l’oignon, puid coupez les en cubes.
๐Ÿฅ„ faites chauffer le bouillon dans une cocotte.
๐Ÿฅ„ajoutez ensuite les légumes et laissez cuire pendant une trentaine de minutes. les légumes doivent être tendres.
๐Ÿฅ„ajoutez à la fin les épices, et mixez au blender et servez.

Good vs bad foods

it seems as though there is a new article coming out each day talking about the latest “bad” foods to cut out of our diets. whether it’s replacing refined sugars with fresh fruit then saying that too much fruit can lead to a buildup of excess belly fat, it can become exhausting.

one thing that has taken me a while to get used to is the idea that no food is bad. the amount that you eat can be harmful, especially if you have an allergy or intolerance. but, saying you will eat 80% good and 20% bad starts to create a negative relationship with food.
.

it has taken me a while to not decide what i am craving based on nutrition facts. i continue to find myself visiting the macros on certain food labels which inevitably makes me second guess if i really want it or not.
.
.
the problem with this is that i am letting numbers dictate how hungry i am. that’s not okay. i shouldn’t let a higher number determine what i am in the mood to eat. just like reaching for the “fat free” version of certain foods and assuming you are making a good choice because it must be healthier right??

once we are able to view all food as good and fair, you would be surprised at how content you will feel. it’s when we stop denying ourselves of the true, full fat, added sugar foods that we don’t crave them as much or want to eat every last morsel of them. chances are that when you substitute a “bad” food with something “good” you don’t get as much satisfaction out of it.

.
i made pasta salad for lunches this week which i wouldn’t normally have done in the past. did i feel the need to eat the entire pot? no. i was satisfied after one bowl but i never hesitate to go back for seconds if i am still hungry. and that’s something that just takes time.
.
.
this multi colored pasta salad was also super easy: combine one box of pasta, three peppers (i do one of each color to brighten up the dish), one purple onion, grape tomatoes, one cup of italian dressing and parm cheese on top!! this is a great side for any meal or i typically add chicken if i make it as a main dish. try it out!
