{new} roasted cauli n' cheese (low carb!) ⠀
.⠀
we're using that insanely versatile vegetable; the cauliflower here...simply roasting it up, then tossing it in a homemade cheese sauce.⠀
our end result is creamy, and delicious comfort food with way less carbohydrates than traditional cheesy mac.⠀

makes 4 servings⠀

ingredients:⠀
1 large cauliflower head cut into florets (about 4 cups of florets)⠀
2 tbsps olive oil, or avocado oil⠀
1 cup unsweetened almond, coconut, or cashew milk⠀
1 tbsp gluten free flour⠀
1/2 cup shredded cheddar cheese (i used sharp)⠀
1 tsp garlic powder⠀
1 tsp onion powder⠀
sea salt and pepper to taste, about 1/4 teaspoon each⠀
1 tbsp freshly chopped parsley⠀

optional: crumbled nitrate free bacon to sprinkle on top⠀

instructions:⠀

preheat your oven to 400 degrees f.⠀

in a large bowl, thoroughly stir the cauliflower florets with your oil and season with a pinch of sea salt and pepper.⠀
on a large, flat rimmed baking sheet, covered with parchment paper, arrange the cauliflower florets in a single layer. roast them in your preheated oven for 12-15 minutes, or until they are golden on the sides and fork-tender.⠀
add yourmilk and flour to a saucepan and whisk until incorporated. heat over medium-low heat and stir in the cheese, garlic powder, onion powder, sea salt and pepper. stir constantly to avoid cheese sticking and burning to the bottom of the pan. cook until you get a smooth thick sauce.⠀

remove from heat.⠀

pour your cheese sauce over the roasted cauliflower and toss to coat.⠀
sprinkle with parsley and crumbled bacon if desired and enjoy! ❤

balsamic roasted mushrooms with herby kale mashed potatoes⠀

this is a vegetarian meal that will please any "meat and potatoes" style meal lover.⠀

balsamic roasted mushrooms⠀
* 1 lb. mushrooms⠀
* 1 tbsp olive oil⠀
* 3 tbsp balsamic vinegar⠀
* 1/2 tbsp brown sugar⠀
* 1 tbsp soy sauce⠀
* 2 cloves garlic, minced⠀
* 1/4 tsp dried thyme⠀
herby kale mashed potatoes⠀
* 2 lbs. russet potatoes⠀
* 6 oz. kale, chopped⠀
* 1 tbsp olive oil⠀
* 3/4 tsp salt, divided⠀
* 1/2 cup sour cream⠀
* 1/2 cup milk⠀
* 1 tsp dried parsley⠀
* 1/2 tsp dried oregano⠀
* 1/2 tsp dried basil⠀
* 1/4 tsp garlic powder⠀
* 1/4 tsp onion powder⠀
* freshly cracked pepper⠀
preheat the oven to 400ºf. wash the mushrooms and cut them in half if they are large. in a small dish, stir together the olive oil, balsamic vinegar, brown sugar, soy sauce, minced garlic, and thyme. place the mushrooms in a casserole dish in a single layer. pour the balsamic marinade over top and stir until the mushrooms are coated. transfer the the mushrooms to oven and roast, giving them a stir every 15 minutes. after 45 minutes the mushrooms should be tender and there should be a nice sauce in the bottom of the dish. meanwhile, peel and dice the potatoes into one-inch cubes. rinse the cubes well, then place them in a large pot, add 1/2 tsp salt, and cover with cool water. place a lid on the pot, boil the potatoes until they are very tender. once the potatoes are very tender, drain them and rinse them briefly with hot water. to the p*t used to boil the potatoes, add the chopped kale, 1 tbsp olive oil, and 2 tbsp water. sauté over medium heat just until wilted (3-5 minutes), then remove the kale from the pot. return potatoes to the p*t along with the sour cream, milk, dried parsley, oregano, basil, garlic powder, onion powder, 1/4 tsp salt, and some freshly cracked pepper. mash the potatoes until smooth, add more salt if needed. stir in the sautéed kale. to make the bowls, add 1/4 of the herby kale mashed potatoes to each bowl, then top with 1/4 of the balsamic roasted mushrooms.

how to "find " more time each day!⠀
7 days of pre-made, drop into the blender-green morning smoothies!⠀
.⠀
what i did for 1 week prep today:⠀
(you can use any favorite combo of fruits or make these for any servings/days -adjust!)⠀
2 servings per day for 1 week:⠀
■7 or more gallon ziploc freezer bags, large tupperware containers, or large glass canning jars (if you have freezer space...can reuse ziplocs the next week, to prevent waste)⠀
add to each packet:⠀
■1 cup fresh baby spinach (freezes very well) and 1/2 cup organic chopped kale⠀
■1 cup organic berries of choice🍓⠀
■1 banana🍌⠀
■optional: a handful of organic green grapes⠀
{seal, place in freezer immediately. when ready to prepare, place packet ingredients in a high powered blender. you may need to chop banana into smaller pieces. add 1 cup liquid; such as cold water, unsweetened coconut milk, almond milk...etc.⠀
these are best used within 30 days once frozen.⠀

have you ever heard of batching?⠀
batching is: doing a bunch of similar tasks all at once!⠀
when we get in our "groove" with a single task we become more efficient.⠀

instead of spending 10 minutes each morning; deciding, finding, and preparing smoothie ingredients, you can prepare 1-2 weeks worth of your favorite smoothies all at⠀
once-in about 20 minutes total!⠀

spicy udon with stir fry tofu and greens beans 🌱 a very easy and versatile dinner you can have on the table in less than 30 minutes!⠀

recipe:⠀
i packet firm tofu- cut into cubed⠀
1/2 cup green beans- trimmed⠀
4 mushrooms sliced⠀
1/4 cup chickpeas⠀
2 tsp miso⠀
1 tsp sesame oil⠀
1/2 tsp tamari⠀
2 tsp onion powder⠀
1 tsp garlic powder⠀
1/2 cup water⠀
2 tbsp lime juice⠀
1/2 tsp sesame seed⠀
salt and pepper for taste⠀
firstly heat oil in a frying pan and adding in the tofu. cook for about 5 minutes on both side till browned. remove from the pan and set aside. adding in the green beans, mushrooms and chickpeas in the same pan. now add in the onion powder, garlic powder, miso, tamari, sesame oil, lime juice, water, salt and pepper for taste. cook till the liquid in the pan evaporated. lastly add in the fried tofu.⠀
udon- cook noodles according to the package’s directions. strain out the water. mix in the chillies oil, crispy chillies flakes and soy sauce depending on your taste.⠀
finally serve the udon with stir fry tofu, 🥒 and tossed in the sesame seed on it.

Meal planning is absolutely the most important part of aip. you don't want to be stuck out and about and be so starving you make bad chooses and it helps keep costs down by transforming similar ingredients into different meals. this meatloaf is a great next day dinner, or visa versa, to my stuffed apples. simply use half of the ground beef for each recipe.

high protein chopped salad 🌱🍅 🐔⠀

there's just nothing quite like a really great salad, packed full of all the goodies! 😍⠀

makes 4 servings⠀
-⠀
ingredients:⠀
1 lb. chicken b****t halves⠀
1 tsp avocado oil, or olive oil⠀
4 large eggs⠀
1 ripe avocado, diced⠀
6-8 cups fresh chopped salad leaves of choice (butter lettuce, romaine, arugula or baby spinach)⠀
½ red onion, diced⠀
2 cups halved cherry tomatoes⠀
4 celery ribs, thinly sliced⠀
4 slices nitrate-free bacon, crumbled⠀
1/4 cup homemade basil pesto sauce⠀
2 tbsps fresh lemon juice⠀
sea salt and fresh ground black pepper, to taste⠀

instructions:⠀

season chicken b*****s with sea salt and pepper on both sides.⠀

heat a large skillet over medium heat, then add 1 tsp of oil.⠀

cook chicken until golden brown and no longer pink in the center, about 4-5 minutes on each side.⠀
set aside to rest, then once cool enough to handle, chop it into small pieces.⠀

meanwhile, place the eggs in a saucepan and add enough water to cover them. bring to a boil, then cook for 8 minutes. let them cool completely and then peel and dice.⠀

gently toss all of your salad ingredients, and drizzle with pesto and fresh lemon juice.⠀

taste test and adjust seasonings, enjoy!

my kids love meals like this, where they get to add toppings and make it their own! makes 4-6 servings

ingredients:
2 large boneless chicken breasts, cut into 1/2 inch cubes
1 tsp ground cumin
1 tsp smoked paprika
1 large yellow onion, diced
1 bell pepper, seeded and diced
4 fresh garlic cloves, minced
1 (14 oz.) can low sodium kidney, pinto or black beans, rinsed and drained
1 cup frozen organic corn
2 cups diced fresh roma tomatoes
2 cups cooked brown rice, or quinoa
1/2 cup shredded cheese
2 tbsps avocado oil, or olive oil, divided
1/2 tsp freshly ground pepper, divided
1 tsp sea salt, divided
toppings:
1 avocado, diced
diced green onions
chopped fresh cilantro leaves
lime wedges
plain greek yogurt, or sour cream
salsa

instructions:

heat a large skillet over medium heat.
add in one tablespoon of your oil and swirl it around to coat the pan.

add chicken and sprinkle with all the seasonings, and about half of the sea salt and pepper this recipe calls for; or to taste.

cook, stirring occasionally for about 5-7 minutes or until chicken is cooked through.

once the chicken is done, remove from the heat and set aside on a large plate.

add the remaining oil then stir in onion and bell pepper; sauté for 3-4 minutes until translucent, add garlic and continue sautéing for about 30 seconds more.

next, stir in the beans, corn, roma tomatoes, your cooked rice, and a pinch of sea salt & pepper; stir until everything is well combined and begins bubbling.

return cooked chicken to the skillet, stir to warm, and sprinkle with shredded cheese.

at first chocolate pani puri was a big no for me but when i ate it, i literally became fan. instead of puri they made small puri of chocolate and fillings were of ice-cream, whipped cream and sprinkles of chocolates at the top which was served with chocolate sause.
if you like chocolate then it is a must for sweet dish but if you don't like chocolate much i recommend you not to have it because it's too sweet.
