๐Ÿ›’ ingredients:โฃ
- 3lbs chicken thighs ๐Ÿ—โฃ
- 3lbs broccoli ๐Ÿฅฆโฃ
- 5 tbls grass fed butter.โฃ
- 4 garlic cloves.โฃ
- 2 tsp paprika.โฃ
- pink salt.โฃ
- pepper.โฃ
- juice of 1 lemon ๐Ÿ‹โฃ
- 1 cup chicken stock.โฃ
- optional: 1/2 cup fresh parsley.โฃ

๐Ÿ‘ฉ๐Ÿผ‍๐Ÿณ directions:โฃ
1. in a bowl, combine paprika, salt and pepper. season the chicken and set aside.โฃ
2. heat a large skillet on medium heat with half 3 tbls of butter. evenly lay the chicken thighs in a single layer. cook for 5-6 min on each side.โฃ
3. once cooked, transfer the chicken to a plate. then, in the same skillet, lower the heat and melt the remaining butter. add parsley and garlic and cook for a few minutes. then add in your chicken stock and lemon then reduce the sauce for a few minutes.โฃ
4. add back in the chicken thighs and reheat. add additional squeezed lemon on top and butter.โฃ
5. get your meal prep containers out and add in your cooked broccoli, rice of choice and chicken!๐Ÿ‘Œ๐Ÿปโฃ

q: do you always used canned ingredients?
a: for certain foods absolutely. beans, tomatoes, some veggies and some sauces are perfectly good, cheap and convenient options for meal prep! i love buying canned ingredients because they last a long time. nothing unhealthy about them in my book and i don’t have the patience for soaking beans.
.
q: how long do your groceries last?
a: perishable ingredients only sit in my fridge for a day or two and then i meal prep with them long before they spoil! i buy fresh produce every week. ingredients like chicken sausage, tortillas, pasta etc last a long time in my pantry/fridge/freezer.
.
q: do you ever buy organic?
a: sometimes but i don’t go out of my way to buy organic. my priority is eating healthy on the cheap and unfortunately organic foods are a little overpriced here in nyc. i’d rather eat regular produce than no produce at all you know?

bell peppers are a tasty, colorful, & low calorie snack that are also extremely nutritious. bell peppers are packed with vitamin c, a, water, & antioxidants. they’re also low in calories & a good source of additional vitamins & minerals like vitamins e, b6, k1, potassium & folate.

one common misconception is that the different colored peppers are all the same plant, just at different stages of ripeness. however, that is not true. while it is true that some green peppers in the grocery store are unripe red peppers, each color has its own unique seed and they all come from different plants. .
green peppers- are the most bitter out of all the peppers. they contain vitamin c, but have the least amount of it compared to the others. they are also a great source of vitamin a, potassium, folate, and vitamin e. it is possible that some of the green peppers you see in the store may be unripe red peppers, however they never turn into yellow or orange ones.

yellow peppers- have more than twice the vitamin c than green, and half the vitamin a. additionally, yellow peppers are a good source of other vitamins & minerals like folate, vitamin e, k1,and b6 & have the antioxidant violaxanthin present.

orange peppers- contain a bit more vitamin c than green peppers but less than yellow ones. they’re also a good source of vitamin a as well as other vitamins & minerals like potassium, folate, vitamin e, b6, & k1. .
red peppers- tend to be the sweetest & have the most vitamin a out of all the bell peppers (they have 8x the amount of vitamin a than green!). they are also a good source of vitamin c & have the antioxidant capsanthin present, which is responsible for the red color. before they are ripe, they can be green in color, which is why occasionally green peppers in the store are actually red ones. :) .
