brett_thaler Life update: 🌍😎👉☺️🌱 hello to all of my family and friends back in the states! aida and i are enjoying our time in germany. this is a rare pic as for the past few years you would hardly find me outside without a pair of sunglasses. 🔘 things have been changing as i have been working on a new chapter of my life. i'm very happy and proud to say that for the past 4.5 months i have been 100% plant based and vegan. 🔘 coming from a guy who use to eat meat, eggs, and dairy all day, every day to someone who just went 135 days without consuming any of it. 🔘 i wanted to wait until i hit at least 4 months rather than just a few weeks to have a more realistic approach and a point to share. 🔘 a huge shout out to my amazing wife, aida who has believed in me the whole time and supporting me every step of the way! this would have been a lot more difficult if it wasn't for her making plant based meals that taste incredible. recipes and much more coming...🤓🔪 🔘 this isn't something that happened over night but this journey of mine that started 5 years ago when i suffered a neck injury and started to learn about inflammation and adding more fruits & veggies into my life. 🤔💡 🔘 my eyes have been sensitive for as long as i can remember and i'm a big believer that reducing inflammation as much as i can in my diet while adding all of these plants into my life has had profound results. 🔘 it's been months since i have worn sunglasses and i'm starting to see things with a whole new perspective. you'll be hearing and seeing a lot more of me moving forward and i can't wait to inspire others with everything we've learned. 🔘 plants can and will change your life and we're here to prove it to you!! ✌️😄🍎🥒🥕🥝🍓🍇🍐

humbleherbivore This might possibly be the most gorgeous & delicious thing that has ever come out of my oven. just sweet enough, not too dense, perfectly spiced...guys, it's literally perfect. it belongs on your holiday table of goodies. (the dough is a modified version of the @ohsheglows cinnamon buns recipe) braided apple, cinnamon and pecan wreath dough: ½ cup warm water 1 tablespoon sugar 2 teaspoons instant dry yeast (1 packet) 1 cup whole wheat all-purpose flour 1 ½ cups all-purpose white flour ½ cup sugar ⅓ cup vegan butter ½ cup cold unsweetened almond milk (if sweetened, cut back on sugar to 1/4 – 1/3 cup) 1 teaspoon salt filling: 1 apple ½ cup apple jelly 1 ½ tablespoons lemon juice ¼ teaspoon salt ¾ cup chopped pecans (or your preferred nut) ¼ cup brown sugar cinnamon dough: in a large mixing bowl, add the warm water sugar and yeast. stir until most of the sugar is dissolved and set aside until foamy (5-10 minutes). in a small sauce pot, heat the butter until melted and then remove it from the heat. add the sugar and stir until mostly dissolved. add the cold almond milk and stir. the mixture should just be warm to the touch, but if it is too hot, let it sit for a few minutes. using an electric mixer (or by hand), mix the melted butter mixture into the large mixing bowl with the yeast until combined. slowly add the flour, one cup at a time until fully combined. on a floured surface, remove the dough and knead for ~5 minutes, sprinkling just enough flour (1 tablespoon at a time) on the dough to prevent sticking. once you’re done kneading, the dough should bounce back when you press on it. place the dough in an oiled bowl and cover it to rest for at least 1 ½ hours. filling (start 15 minutes before rolling the dough out): grate the apple and squeezed it out in cheese cloth or a nut bag to remove excess liquid. in a small sauce pan, heat the grated apple, apple jelly, lemon juice and salt. simmer for 5-10 minutes to reduce some of the liquid from the apple. set aside. dough: once the dough has risen to double its size, roll it out on a floured surface into a rectangle shape. it should be somewhere between ½ - ¼ inches in thickness. **recipe continues below**
