This is frozen pandan leaves from my local asian market. i first learned about pandan when i was backpacking through southeast asia, and took a cooking class in bangkok where we made mango sticky rice. when i tasted it, my mind exploded and i realized that pandan was the signature flavor in thai iced tea that is so hard to put your finger on. it’s a unique flavor that lends itself well to desserts and sweets. i’m using it to cook up a fun cocktail ingredient for tomorrow. stay tuned. .
