recipe for the roasted walnut and sage pesto:
1/3 cup walnuts
1 cups of cilantro
8 whole sage leaves
2 small garlic cloves
2 tbsp nutritional yeast
1/2 medium avocado
6 tbsp water
3 tbsp lemon juice
toast walnuts in a non-stick pan on medium-high heat for about 5 minutes, shaking the pan often until nicely toasted
simply place all the pesto ingredients in a food processor and blend until it’s smooth!

disclaimer lol.. we’ve gotten messages about our random foods put together.. so we wanted to just say this is what we eat and it makes us feel good. we’re not chefs, and we live a fast paced life, but eating a plant based diet has given us so much energy we feel compelled to share without shoving it down anyone’s throat lol

Moist and delicious banana bread by @gaspic_healthyberry 💜
3 ripe bananas medium size⠀
1 cup raw buckwheat groats soaked overnight⠀
2 cups walnuts⠀
1 1/2 cups pitted dates⠀
1/2 cup milk of your choice⠀
1/4 cup liquid oil⠀
2 vegan egg of choice⠀
1 tsp baking powder⠀
1 tsp baking soda⠀
1/4 tsp sea salt⠀
optional but highly recommended!⠀
1/2 tsp ground cinnamon⠀
1/2 tsp ground ginger⠀
1/4 tsp allspice⠀
1/8 tsp ground clove⠀
preheat the oven to 200°c⠀
drain and process the buckwheat until you get a creamy pudding. add bananas, process again. put dates and nuts, process again. you may need to stop processing and mix a little with a spoon or spatula. process until you haven't large pieces of ingredients. ⠀
add the rest of the ingredients and mix or process well.⠀
put the mixture in a mold of 20x8 cm with parchment paper. bake until golden brown on top and almost dry inside. when inserting a toothpick inside the bread the toothpick should come out barely wet.⠀
let cool before cutting. enjoy! #veganfoodspace
I feel like this is the boringest plate i’ve ever posted 😂 turmeric jasmine rice, organic corn, and baked kabocha squash (i think also called buttercup). this is the best squash ever in my opinion, it’s so creamy, sweet, delicious and just has the best texture. if you haven’t tried it yet please do!! check your farmers markets or walmart which is where i got mine. 🤗

For dinner tonight, i made a stew with onions, garlic, red potatoes, rice wine vinegar, orange and white carrots, tomatoes, snap peas, chickpeas, spinach, and nutritional yeast. it was full of flavor and very filling, comfort food at its best on a beautiful fall day. for dessert i made a flourless red velvet mug cake. it was moist and decedent. this was the perfect meal for getting over the hump.
Bringing back these caramel oatcake bites for #waybackwednesday! i remember sharing these during my pre-blogging days. originally named caramel pancake bites, these are a healthier and way tinier version of caramel pancakes/waffles. in fact, my source of inspiration was a pack of caramel waffles given by mama's good friend. who else likes bite-sized treats? ♡
caramel oatcake bites
little oatstanding wraps
splash of vanilla extract
dash of sea salt
date paste (for the caramel filling)
add-ons: coconut oil, desiccated coconut
tiny circular cookie cutter
make little oatstanding wraps (except the last step. see: my blog post; link on my bio). add the vanilla extract and sea salt to the mixture before mixing the dough. i didn't have a small circular cookie cutter, so i used the cap of a bottle (talk about resourcefulness!) to cut out tiny circles from the dough. to make date paste, simply blend pitted dates with a bit of water or milk. once it becomes paste-like, put some on one oatcake. sandwich it with another plain oatcake and repeat. then, heat them in a pan. optional: add coconut oil on the pan and desired toppings (e.g. desiccated coconut). eat and share them #wanderlittlegirl
Just baked meal, when i have a lot of things to do the easy way for me to cook is putting everything on the oven and then broiled it a little bit.. it allows me to do other things in the house. being a mother of 3 kids is a real challange.

I mentioned previously that clarice was rushed to the emergency vet because she had very labored breathing. she spent a few days receiving fluids and getting the care she needed before she was cleared to come back home. today she had her 10 day check up and she’s looking a lot better! she’s now on a new daily prescription and it seems to be working very well for her. unfortunately her bloodwork showed that she’s in the early stages of heart disease and she is dealing with arthritis but this is to be expected with a chicken her age (10 years old!!) so we’re keeping her comfortable and giving her all the blueberries she asks for☺️
the stuffed animal in the picture is clarice’s best bud, because she comes inside at night we don’t want her to be lonely so one of our volunteers gave her a little stuffed annabelle! and she loves it! every morning when i come in she’s snuggling with her stuffed cow🐮💕

1. mix dry ingredients brown rice flour, cinnamon, pumpkin pie spice, baking powder, baking soda, stevia in a large mixing bowl.
Autumnal soup + salad 🍂 meal prep over the weekend included roasting some delectable kabocha squash, and making this addictive cauliflower soup. paired them together for dinner last night and even though it was 74 degrees outside, i was a happy camper 🤓
although i make smoothies multiple times a week, i forget the beauty of a really good soup. seriously, i could eat this one chilled and it would still be fab! keep an eye out for the recipe for both of these this weekend.

What have we got today? beefless stuffed potatoes.
i had some beefless ground from @gardein in my freezer and i didn't even remember because it was all the way back in the freezer. had some potatoes that were about to go bad (still were pretty good) and some mozzarella and cheddar cheese.
instead of bread crumbs, i decided to use panko (my favourite) and then replaced the eggs with some chia powder and some warm water.
