Fermenting just one quarter of a napa cabbage. i don’t like fermenting in plastic, but from time to time i pull out this super cute #picklepress, which i’ve had for close to 30 years. it shows how easy it is to ferment small amounts in a small space. by applying pressure, very soon the salted cabbage will be submerged under its own brine. photo by @sandrinehahn.perez
