On the go with this peanut butter banana breakfast bake this morning 🙌🏼 packed with fiber and low in sugar, and so easy to whip up! paired it with some coconut yogurt and extra nut butter. recipe below •• happy saturday friends!
1 cup rolled oats
1/4 cup buckwheat flour
3 ripe bananas
1/2 cup peanut butter
3 tbsp almond or coconut milk
1-2 tbsp pure maple syrup
1 tsp cinnamon
1 tsp vanilla
1/2 tsp baking soda
1/4 cup dark chocolate chips (i used a broken up @eatingevolved bar)
optional: 1 tbsp maca powder for hormonal balance
1. preheat oven to 375. in a large bowl, mash the bananas then stir in oats, buckwheat, egg, and maple syrup until well combined.
2. mix in remaining ingredients.
3. fill a parchment-lined 8x8 baking dish with the batter.
4. bake for 18-20 minutes. allow to cool before slicing. recommend serving warm, but can be eaten cold as well.

celebrating my sister’s birthday means delicious autoimmune paleo food! like me, she has hashimoto’s thyroiditis.
this salad was a medley of flavors and textures: sweet and tangy, creamy and crunchy. homemade dressing made with lemon, olive oil, honey, salt and ginger.

two delicious meals! whether you choose southwest baked potato with sour cream or our mediterranean loaded sweet potato w/ creamy dill dressing, there’s no bad choice! and we have both in our case now.
Found these lower carb corn tortillas walking around a walmart this morning while making calls and looking for some meal ideas while in california for a few days. they were at least half the carbs of other brands of corn tortillas and gluten-free which is extremely important to me after seeing affects of gluten on my health. they only cost $0.98 a package to make things even better. unfortunately, appears that this brand is only available on the west coast. i hadn't had luck in florida finding lower carb corn tortillas. at the price though; i'll probably try shipping as much as i can in a flate-rate box. i believe for a healthier dietary lifestyle to succeed and be permanent it needs to have lots of variety and taste good. if you feel like you're not missing out you will most likely fall off the wagon. it's little bit more carbs then i'd prefer overall; but they tasted great and i added a fiber powder to my coffee to help offset the carbs in the breakfast tacos.
