You guys. this “mr.fff being gone all week” thing is getting to be really hard πŸ˜₯ and now he’s decided to do extra school work on monday (he’s supposed to be off that day) which means we really only get saturday and half of sunday. 😭 the days are okay, as i keep myself busy. but i have yet to sleep through a whole night as i’m not used to being alone! 😩 wives with husbands who travel, what do you do to help with that? i’m thinking of just eating allll of these red, white and blue paleo and vegan banana 🍌 pudding pops and going into a popsicle-food-sleep coma πŸ˜… good idea?? recipe linked in stories and on the front page of the blog right now! 😎

after a full day traveling around to celebrate father's day with both of our families on sunday, i was just toooo exhausted for a full #foodprep sesh. hey, that's real life!! πŸ’―

i have a short week anyways, so having some veggies prepped is perfect so i can pair with easy proteins that are already in the freezer. πŸ™ŒπŸΌ now that's winning! 🀸🏻‍♀️

here's what i made this week: πŸ₯• roasted carrots (duh!)
🌢 sliced peppers (in my @stasherbag ) - perfect for snacking and to throw into a stir fry!
πŸ₯’ veggie saute with zucchini, peppers, and carrot peels (#nofoodwaste here!)
πŸŒ€spiralized zoodles (so i don't have to do it after a long day!)
🍠 roasted sweet potatoes (not pictured) for an easy carb

I’ve been obsessively experimenting, trying to come up with the perfect baked #veganketocheesecake recipe.

this was the first attempt, and i made the mistake of not calculating the macros before i baked it. turned out each slice was 6g net carbs, which i think is way too high for a treat. i took a bite and it was...okay. into the trash it went. the only part i’m sad about was wasting a whole package of @kitehillfoods cream cheese. my broke a*s can’t afford to do s**t like that! 😭

i made my second attempt last night so i could let it chill in the fridge overnight. the carb count is a much more reasonable 2.8g per slice. it was also much cheaper to make. like, a fraction of the cost of the first one. no fancy cream cheese this time. i’ll find out if it tastes as good as it smells when i eat a piece for “breakfast” this afternoon!

For all my visual learners, this is option 3:
3 entrees, 2 servings each (baked falafel, lentil loaf and spanish gazpacho with a side of endurance crackers and hummus.) examples of how clients are using these meals:
•6 lunches for 1 person • 3 lunches for 2 people
• 3 dinners for 2 people • 1 plant based sampler lunch for an office of 6 people
