Veggie prep 👩🏻🍳 went dowwwnnn in my kitchen last night ... in less than 30 minutes!💃🏽
after a full day traveling around to celebrate father's day with both of our families on sunday, i was just toooo exhausted for a full #foodprep sesh. hey, that's real life!! 💯
i have a short week anyways, so having some veggies prepped is perfect so i can pair with easy proteins that are already in the freezer. 🙌🏼 now that's winning! 🤸🏻♀️
here's what i made this week: 🥕 roasted carrots (duh!)
🌶 sliced peppers (in my @stasherbag ) - perfect for snacking and to throw into a stir fry!
🥒 veggie saute with zucchini, peppers, and carrot peels (#nofoodwaste here!)
🌀spiralized zoodles (so i don't have to do it after a long day!)
🍠 roasted sweet potatoes (not pictured) for an easy carb
nourishing your body with food you love doesn't have to be complicated! take the stress out of prep and you may just be surprised about how good you feel! 💃🏻 i’ll show you guys how i’m veggin’ out (see what i did there?! 😜) all week in my story 👆🏼👆🏼👆🏼

3 entrees, 2 servings each (baked falafel, lentil loaf and spanish gazpacho with a side of endurance crackers and hummus.) examples of how clients are using these meals:
•6 lunches for 1 person • 3 lunches for 2 people
• 3 dinners for 2 people • 1 plant based sampler lunch for an office of 6 people
