School is starting soon! great time to start working on recipes for those school lunch boxes. so, we made granola bars today! these are homemade, vegan, and gluten-free.
granola bars (vegan, gluten-free)
1/2 cup medjool dates, pitted & soaked
3 cups rolled oats (gluten-free)
3/4 cup natural peanut butter (no sugar added), melted
1/2 cup maple syrup
1/4 cup crushed almonds
1/4 cup raisins
1/4 cup sunflower seeds
2 tbsp chia seeds
1/4 tsp pink himalayan salt
1/3 cup vegan mini chocolate chips
preheat oven to 350 degrees. prepare a 9” x 12” cookie baking pan with a parchment baking sheet liner or by lightly greasing with coconut oil.
chop dates in to diced-size pieces. blend date pieces in food processor or blender until it becomes a thick paste. it is okay if there are still a few date chunks.
spoon date paste in to a large bowl and stir in all the remaining ingredients, except the chocolate chips. you can use a spoon or spatula to stir. it works better if you mix it with your hands.
once all the ingredients are well incorporated, stir in the mini chocolate chips. then spoon the granola on to the cookie sheet. with your hands, push down the mixture until it is evenly distributed on the pan and firmly pushed down throughout.
bake for 18 - 20 minutes. allow to cool before slicing. store in sealed container. #granolabars#vegangranolabars#glutenfreegranolabars#granola

guys, i’m totally in love! these granola bars are the b o m b. 👌🏻 not only are they just healthy, they are also organic + non-gmo! all the ingredients can be traced back to their source. making them a real win in my book. •
i discovered that many of the main stream granola bars on the market, are filled with unhealthy ingredients full of added sugars, and often times coated in chocolate. something that is suppose to be a “healthy” choice, really turns out to be the opposite, in most cases. • @foodstirs has a wholesome ingredients list, such as sunflower oil, cinnamon, shredded coconut, & organic cocoa butter. i can have zero mom-guilt over these delicious bars. •
they are quick and easy to whip up! just needing a little bit of water and oil, and some bake time. making it a very simple after school snack, that’ll have your kids chowing them down and asking for more! 😉

it’s been too hot to turn the oven on recently and i don’t have most of my kitchen gear unpacked, so i haven’t done much baking as of late. today, though, i wanted something other than yogurt for breakfast so i made these granola bars from @seriouseats and they hit the spot.
