Murgh tikka - the word tikka comes from the persian language of the mughals and means "pieces”. chunks of chicken are marinated in a spiced yogurt marinade and then skewered and broiled in a hot tandoori oven or baked in a convection oven.
serve with onion, green chutney, lemon wedges and sprinkle some chaat masala.

serves - 4
a. murgh tikka
300g chicken breast
¼ cup hung curd
1 tsp red chilli powder
1 tsp coriander powder
½ tsp paprika (degi mirch)
¼ mango powder (amchoor powder)
1 tsp cumin powder
½ tsp garam masala
⅛ tsp chaat masala
juice of 1 lemon
1 tsp ginger paste
1 tsp garlic paste
½ tsp oregano
3 tbsp vegetable oil
butter for greasing
b. for garnishing
1. wash and cut the chicken b****t to equal sized cubes, remove the moisture from them using a colander for a while to take away the dripping water.
2. in a deep bowl add the hung curd, red chilli powder, coriander powder, paprika, mango powder, cumin powder, garam masala, chaat masala & lemon juice. mix well.
3. add ginger and garlic paste. mix well.
4. add oregano. mix well.
5. make small slits in the chicken and mix it with the ground spices really well.
6. add vegetable oil over the chicken and massage it for atleast 10 minutes.
please note: do not skip massaging the chicken because this is the trick to make your chicken tikka tender and soft instead of chewy.
7. marinate for 3 hours or overnight if possible.
8. pre-heat the oven at 180ᵒ c.
9. grease the baking tray with butter. place the marinated chicken on the prepared tray & brush it softly with some butter. cook for 9 minutes on one side then turn & cook for another 9 minutes from the other side.
10. for serving, plate the cooked murgh tikka with some onion rings, green chutney, lemon wedges and garnish it with some chaat masala.

1/3 cup good olive oil
garlic cloves, cut into thin slivers
1/2 tsp crushed red pepper flakes (more if more heat preferred)
1/2 cup minced fresh parsley (i didn’t have any)
1 cup freshly grated parmesan cheese
seafood, they requested prawns and deshelled clams.
cook pasta in salted boiling water. remember to set aside some pasta water when pasta is done.
5mins before pasta is al dente, fry garlic lightly in the olive oil. add crushed red chilli flakes and allow to fry for a minute.
add seafood (prawns & deshelled clams) when it’s almost done, add 1/2 cup of pasta water and let it simmer. salt and pepper to taste.
add pasta directly into pan and allow it to soak up the liquid. i would add the parsley at this stage and just toss lightly.
finally grate fresh parmesan cheese over before serving if preferred.

An extremely easy and really refreshing dish.. chicken roll ups 😋
i had a rather large chicken b****t and instead of trying to stuff it (bc it’s harder to get it cooked all the way though) i decided to cut it in half and use the ingredients that i was going to stuff it with and roll it up inside instead! turned out rather fabulous if i do say so myself 💁🏽♀️ anyways i laid down some spinach, used a couple slices of havarti cheese (but i’m sure most cheeses would be delicious!), and then a slice of tomato. rolled it up and bam 💥 threw on my seasonings and then at the last minute decided to wrap it in a piece or turkey bacon 🥓 i was really just trying to get rid of it but i ended up wasting it. i didn’t like the flavor of the turkey bacon with everything else so i peeled it off after i tried it and gave it to odin lol it was way better without! but if you’re someone who really loves turkey bacon i say try it with and without and you tell me which you like better! i’m weird about it so i only eat it with certain things lol
