I never thought i could do this. i never thought that i had willpower, that i could stick to something, that i could look a fresh loaf of bread in the eye and say “no”. (i know bread doesn’t have eyes, but go with me here. 🥖.) after so many failed attempts to improve my health i had all but given up. i am so happy i gave it one more try. /

40 pounds down, but that’s not the biggest victory. i am happy, i am proud of myself, and i am excited about life. those are the real victories.

This pancake recipe is a classic 😍and this is my mother's favorite as she always asks me to reserve one whenever i make this 🥞and this morning, she asked me again if i can teach her the procedure 🤣but i'm the worst teacher lol hope you can try this oatmeal pancake friends and share it with your fam 😋it's easy to make and good for you ✨
ingredients:
1 medium sized ripe banana
3/4 cup soy or almond milk
2 tsp baking powder
1/4 tsp salt
1 tsp apple cider vinegar
1 tbsp (or 2) sugar or sweetener
1 cup quick cook oats

combine everything in a blender or food processor. blend or pulse until just to incorporate the ingredients. do not overmix. let the mixture sit for 5-10 minutes to thicken. medium heat nonstick pan, pour a heaping tablespoon of the batter. you can adjust the heat of the pan to low. wait til edges are almost done about 5 min.

1. i make the batter in a blender. it's easier and takes less utensils to wash after.
2. put the wet ingredients first! follow this order banana, plant milk, apple cider vinegar/lemon juice, sugar, vanilla (optional), baking powder, salt, quick oats. fold in the chocolate chips.
3. pulse just to incorporate. let it sit for few minutes to thicken. i notice when i'm almost done using the batter, the last pieces of pancakes turn out to be more fluffy.
4. invest in a good non stick pan!
5. start with medium high heat then once the pan is hot turn it to low.
6. flip the pancakes once the edges are dry and almost done cooking. .

deep fried summer rolls anyone?
i wrapped it in fresh veggies, cellophane noodles and crispy garlic. it is so light, crispy and airy🌱
enjoy 😋
recipe:
10 pcs spring rolls wrappers
1 small purple cabbage- finely sliced
1 carrot- thinly sliced
20 gm cellophane noodles -soak in hot water for 10 minutes, drain out the water.
50 gm bean sprouts
some crispy garlic
1 tbsp sesame oil
onion salt for taste
coriander for garnish
add in the cooked rice noodles, sesame oil, crispy garlic and onion salt in a big bowl (set aside).
place a spring roll wrap onto a towel and fill it with all the fresh veggies and top some cooked glass noodles. make a sausage like shape out of the fillings at one end of the wrappers. fold sides in and begin rolling the spring roll. at the end of the rolling seal it by moistening the edge with water.
heat the oil over medium-high heat. fry the rolls and ensure turning frequently until the spring rolls turn golden brown. finally serve with any your favourite dipping sauce.

Getting friendly with my new kitchen space this morning. i have very limited counter space in my new home, but dats alright because it’s just forcing me to use less dishes and be a cleaner cook.👩🏼‍🍳 woke up early to do some writing this morning and helped my grandparents with some yard work a little bit ago. going to read my book out in the sun this afternoon and probably do some yoga. not much on the agenda today, and i keep reminding myself that that’s quite alright.

deats:
2 eggs mixed with almond milk for extra fluffiness and scrambled with sweet potato cubes, yellow squash, bell pepper, garlic, and kale. spices used: turmeric, paprika, basil, salt, pepper, onion powder. start by placing cubes in a greased pan (i used ghee) and leave until soft. add in bell pepper and squash and continue frying until potatoes are crispy and veg are cooked through. then, add in your eggs and spices. once eggs are halfway cooked, add in a handful of kale and continue frying until eggs are done. top with avocado, chili flakes, and kimchi—i tried a new brand @nasoya and really liked it.

Hello fiber friday! this grain free fiber packed 'oatmeal' is one of my favorite snacks. it's also perfect as breakfast or pre-workout snack! .
.
apple and pecan 'oatmeal' .
1/2 medium size apple w skin on
1/4 cup pecans
1/4 cup homemade cashew milk or unsweetened almond milk
a pinch of salt .
pulse in a mini food processor or blender until resembles oatmeal consistency. about 30 seconds. .
serve with a tbsp of @coyo_organic plain coconut yogurt and fresh berries
