as a kid, homemade gingerbread men with icing and smartie buttons were my favourite treat 🤤👌🏻.there is something special and festive about gingerbread that everyone loves. here i created my own but with a healthier twist. i plan on making lots over the christmas period and my next batch will be decorated!
to make 👉
2 cups almond meal
1 cup oat flour (ground oats will do)
1/4 cup coconut oil or butter
1/4 cup sweetner of choice (i used rice malt syrup)
5 large or 7 small dates (soaked in hot water to soften)
1 tsp baking powder
1 tsp cinnamon
1 tsp ginger
1 tsp vanilla
1. place all dry ingredients in a bowl (flours, baking powder, spices)
2. using a food processor, blender or hand mixer, blend soft ingredients (dates, vanilla, sweetner,coconut oil) to make a thick paste. add to dry
3. mix together to form a dough. roll out and shape mixture however you like (cookies, gingerbread men, shapes) and leave to refrigerate for 30-60 mins.
4. place in preheated oven for 15-20 mins or until golden. enjoyyy
⭐️ banana & oat cookies ⭐️
this lil dude approves and can not get enough. with just 2 ingredients, these are literally the easiest things to whip up in just 15 minutes! breakfast cookies, school lunches or a great mid afternoon snack. .
~ 3 ripe bananas
~ oats - rolled, quick or gluten free
~ optional: blueberries, cacao nibs or your fave additions .
for 7-8 good size cookies, mash 3 bananas til super soft. add in approx 2 cups of oats, quick oats are easier and much softer but rolled oats work too. gradually add them in until you’re happy with consistency. spoon onto baking tray lightly greased or on baking paper, flatten slightly and put in oven ~ approx 150 degrees celsius fan forced for 10 minutes.

Another lil personal post/ish. christmas season is coming up, and i know how hard it is for some of you that follow me. for many of us it has been a year or two since we have seen family members, we think "oh i bet they're going to notice how much weight i've put on", "they're going to think i've let myself go". and on the other side of things, we've got food. food at christmas time is huge no matter where you are in the world. everyone comes together to eat, the amount of food, the unknown amount of calories, not knowing what ingredients are in it. there are so many things that can be scary, i mean it still is scary but i am so so so much better mentally than the previous two christmas'. and oh boy am i looking forward to a big ol bowl of trifle 😂🙌. nah but seriously, it is so difficult but it's so worth getting better. i know most people would look at me and wouldn't think that i've ever struggled with any sort of eating disorder because i never speak about it, and i'm not the typical "thin" person you'd think you would see that has an eating disorder. but sometimes what goes on in your head isn't what shows on your exterior. today has been tough, i overheard someone speaking about my legs calling them "stumpy", one of my biggest insecurities. usually i'd restrict for a good couple weeks until i got over it, but you know what i did? i realised i'm better than them lol like who obviously speaks about someone like that when they can hear?! i also had a few servings of cheddar shapes (something i haven't had since god knows when) but cravings were calling, so i got them and i don't even care lol they were yum 👍
