Taking advantage of fig season! a heaping bowl of ripe figs in my fridge inspired me create this delicious chicken recipe. sauté chopped fresh figs with onions, garlic, and lemon olive oil. once caramelized, add the chicken b*****s and balsamic vinegar, then cook for 5-7 minutes. then add a splash of chicken broth and allow to simmer until the chicken is completely cooked. add olives and thyme. serve over roasted cauliflower or cauliflower rice. || chicken b*****s + fresh fig + balsamic vinegar + lemon+ garlic + olives + chicken broth + lemon olive oil + thyme #healthycooking #homemade
