Support your spouse!
i’ve said many times before that i am not a big fan of running. i don’t mind the physical side of it, it’s just monotonous and boring for me. especially as the runs get longer, my desire to do them goes down.
but, my wife, @fitmommamaghan, loves to run and is training for a full marathon in december. so when she asks me to run with her, of course i’m going to do so.
this run isn’t about me. if it was i’d run the actual race with her, but this is her thing. this is about her and what she will accomplish.
we tell our children all the time that sometimes we do things we don’t necessarily want to do for others. we need to listen to our own advice, especially with regard to our spouse. support them and their goals.
i may not like to run, but i love to do what i can to support my wife!

Banana oat, chocolate-chip peanut butter pancakes!
i've struggled to find the perfect vegan pancake recipe over the years, i could never get the consistency quite right, but these were perfect!
so glad i have a recipe to share and make for brunches to come!
-2 very ripe bananas
-1 cup oat flour
-1/2 cup oats
-1 teaspoon baking powder
-1/2 teaspoon salt
-1 teaspoon vanilla extract
-1/2 cup plant milk (or more depending on how big the bananas are)
-1 teaspoon cinnamon
-peanut butter and maple syrup to top.
-vegan chocolate chips to taste
1. combine dry ingredients well in one bowl, and wet in another. slowly incorporate wet ingredients into dry, making a batter consistency.
2. using a non-stick pan, or a very small drop of oil, scoop batter onto pan in 1/3 to 1/2 cup measurements.
3. once bubbles start forming at the top, and the bottom turns brown, flip and continue to cook until done. roughly 5-6 minutes altogether.
4. serve with toppings of choice! we used peanut butter, maple syrup and cinnamon. would also be great with chopped walnuts in the batter!
