Sharing these banana blueberry muffins today. they’re #grainfree and #lowcal plus they have about 4 grams of #fibre per muffin. tip: make these at night and let them sit overnight before eating to let the flavour sink in. they’re so much better the second day!
ingredients ▪️3 ripe bananas, mashed ▪️2 eggs
▪️2 tbsp coconut sugar
▪️1 tsp vanilla
▪️1/4 cup coconut milk
▪️1/4 cup banana flour
▪️1/4 cup coconut flour
▪️1/4 cup psyllium husk (you can try subbing with ground flax)
▪️1 tsp baking soda
▪️1 tsp baking powder
▪️1 cup blueberries
1. preheat oven to 350 and line a muffin pan
2. in a bowl whisk together the eggs and sugar. once combined add in the bananas, vanilla and coconut milk. mix until combined.
3. in a small bowl mix together the flours, psyllium husk, baking soda and powder.
4. add the dry ingredients to the wet and stir. once combined add in the blueberries
5. evenly distributed into the muffin tins.
6. bake for 30 minutes. let sit over night and enjoy!

Happy #toasttuesday 🎉🎉. i was so excited for it this week because i finally got my hands on the @ggfiber crackers while i was in florida. not gna lie, they taste like cardboard if you eat them plain. but once you top them they’re great. super filling because theyre #highfibre and they satisfy a craving for something crunchy. i used mine to make #avocadotoast with #smokedsalmon and of course #everythingbutthebagel seasoning. i also had some cherry tomatoes on the side and pink grapefruit!
Someone asked me recently if i was going to miss the student life of living of p*t noodles 🤔. not gonna lie, don’t think i’ve eaten p*t noodles in the 4 years i’ve been here (not really my thing 😂), but i’ve certainly enjoyed plenty of beans on toast. combined with half an avocado, and the meal is complete. this is certainly one i’ll be continuing to enjoy after i graduate! 😋 #mylifeisforliving
