i made gnocchi today! the same recipe that i learned from my grandma. we used to make this a couple times every year for as long as i can remember. this is not a “one man job “ 🤣 so we used to do it together, grandma, mom and i .
it’s all handmade, one by one... they are called “italian dumplings” or pasta, the main ingredient is potatoes and if you make it right it should be soft and light. if you work the starch from the potatoes and the gluten from the flour too much it will be heavy and “doughy”. but... i get it right every time 🤣
first boil the potatoes, peal, mash... add the flour, egg, butter, sea salt, milk, and mix it by hand. carefully, don’t mix too much! than you roll, cut roll again each on the little border to add the texture ( i did not do this time this part to save time) after you just have put inside the boiling water. when floating they are done, drain and add sauce! 😋😋
