What’s for dinner? try raiding your home bar! this time around, i dusted off my dry vermouth, that little green bottle that usually only gets love when you’re making martinis or manhattans. 🍸🥃 vermouth can be used like white wine in your recipes, but imo does even more heavy lifting. vermouth brings complexity, fuller flavor, and an herbal extra-something — ie: a great compliment to a sweet, buttery-in-taste-but-not-ingredient, somewhat grassy dish like this, vermouth garlic scallops with fennel and castelvetrano olives. another bonus: vermouth keeps a lot longer than wine.
first, marinate the scallops in vermouth, olive oil, salt, and garlic for a couple hours. pat them dry and sear them off in olive oil. then deglaze the pan with even more vermouth and fresh-squeezed orange juice. saute some fennel until just tender, then toss in some juicy castelvetranos.
