Blt balsamic chicken avocado salad
blt balsamic chicken avocado feta salad is a delicious twist to a blt in a bowl! with a balsamic dressing that doubles as a marinade you won't even miss the bread in this mega loaded salad.
weight watchers smart points: 12 per serve
author: karina - cafe delites
serves: 4
ingredients
balsamic dressing / marinade:
⅓ cup balsamic vinegar
¼ cup olive oil
2 tablespoons water (or more oil if you wish)
2 teaspoons italian seasoning
2 teaspoons minced garlic
1 teaspoon honey
¼-1/2 teaspoon salt (adjust to your tastes)
4 skinless and boneless chicken thigh fillets (or b****t fillets)
salad:
5 ounces 150g bacon, diced and trimmed of all fat
8 cups mixed salad lettuce leaves (or romaine cos lettuce leaves)
2 tomatoes, chopped
1 red onion, thinly sliced
1 avocado, sliced
¼ cup crumbled feta cheese
extra italian seasoning
salt and pepper, to taste
instructions
whisk balsamic dressing / marinade ingredients together until well combined. pour 2-3 tablespoons into a shallow bowl. add the chicken thighs and coat evenly. season with salt and pepper; set aside for 10 minutes while the frying bacon.
fry bacon until crisp in a skillet over medium-high heat. wipe pan over with paper towel.
cook chicken fillets until crisp and cooked through (about 7 minutes each side).
arrange all salad ingredients in a large bowl. top with the bacon, chicken, avocado and sprinkle with feta, extra italian seasoning and salt and pepper to your tastes. drizzle with the remaining dressing, and serve.

Fruity toast party with homemade chocolate almond butter! which one would you pick?
happy toast tuesday!
have you ever made your own nut butters? it’s the easiest thing if you have right tools. you need a powerful food processor and little bit of patience. once you start making your own nut butters, i promise you won’t buy any store brands. i added some cocoa to mine this morning and got this luscious chocolate spread that only has few ingredients.
here is a recipe!
2 cups of raw almonds or roasted
1/2 tsp salt
3 tbsp of cocoa powder
2 tbsp or more maple syrup depending how sweet you want.
1 tsp vanilla extract
instructions
put the almonds in a high-speed blender or food processor. blend until creamy, pausing to scrape down the sides as necessary. you’re going to think it’ll never blend, but be patient! the almonds will go from flour-like clumps, to a ball against the side of food processor. it will eventually turn lusciously creamy. if the mixture gets hot, stop and let it cool for a few minutes.
once the almond butter is very smooth you can blend in any add-ins you would like. i always add salt, for more flavor overall. add the cocoa powder, vanilla and maple syrup.
blend until the add-ins are evenly dispersed.
let the almond butter cool to room temperature, then transfer the mixture to a mason jar and s***w on the lid. store in the refrigerator for up to 2 weeks. you can freeze it for longer shelf life. enjoy.

Pb banana protein nice cream!! 🍌🥜🍦 i was craving something sweet for breakfast (something that’s only started since i made this account so thanks guys for broadening my breakfast horizons!!) so i whipped this up in less than 10 mins 🤗
in a blender (i use a @vitamix ) combine:
1 1/2 frozen bananas
1/2 scoop @womensbest vanilla protein powder
1 tsp pb
a splash of almond milk to make it easier to blend
i topped it with:
1/4 banana
unsweetened coconut flakes
a piece of dark almond chocolate (just chopped finely)
i love nice cream cause it’s nice and light and doesn’t upset my stomach like real ice cream usually does! this one was so good i never wanted it to end 🤤

Hi guys! happy sunday night ❤️ i ate a late lunch today so am having a lighter dinner. my avocado shrimp salad is delicious and guilt-free. i always keep plain frozen shrimp from @wholefoods in my freezer for a quick protein source (and it always comes in handy!) i sautéed a bit more than 1/2 a cup of shrimp and let cool for about 10 minutes. then i chopped them up and combined with 1/2 of a very ripe avocado and a small amount of @primalkitchenfoods avocado oil mayo (i eyeballed it, but a little goes a long way), topped with a little @traderjoes chile lime seasoning (can’t live without it lol). this healthy shrimp salad is soo delicious on @ggfiber, i can’t even tell you! fiber, protein, healthy f*t ✔️ hope you all had a great weekend! #foodforthought #thefeedfeed #forkyeah #easymeals #rdapproved

This #smoothiebowl was dreamy 😍 #protein packed, super thick with a nice crunch thanks to @naturespathorganic h**p granola ... recipe here 👇🏻
1. 1 cup frozen fruit (blueberries, raspberries, strawberries) honestly a handful works too lol
2. splash of unsweetened vanilla almond milk - about 1/2 cup may be a little more - add enough so its thick
3. 1 scoop of vanilla whey protein (i used the gold standard)
4. blend and top with fruit of choice, granola of choice and any other toppings you’d like (unsweetened coconut flakes, almond butter, etc)

deets: chickpea pasta topped with homemade pesto and goat cheese parmesan. shrimp seasoned with new bae seasoning and sautéed in a small amount of coconut oil, roasted tomatoes and castelvetrano olives 🙃 pesto recipe: half container of baby kale, 1 cup chopped basil, 2 tablespoons cashew butter, 1/2 cup olive oil, 2 cloves garlic, 1/2 teaspoon salt, 1/2 teaspoon red pepper flakes, juice of half lemon, 1/2 tablespoon coconut aminos. process in food processor until smooth.

usually i procrastinate my #liss workout (usually just a 35 minute walk around the neighborhood) starting my day off with fb and other “anti-social media’s”, but when i opened fb today i saw @kayla_itsines latest post about starting your day off right, and i realized that is exactly what i wanted to do today.

🤦🏻‍♀️today i got caught up in some negative thoughts, i felt so bored and started blaming it all on everything and everyone around me. it felt like i got stuck here in kazakhstan - even tho coming back here was something i wanted so bad.
👩🏻‍💻then i opened ig and read through my favorite @laura.herde feed - my biggest motivation! so i immediately reminded myself about all the things i haven’t done here yet, all the amazing places i haven’t visited, all the awesome people i haven’t met yet. everything became so clear to me - life is always amazing, and i am the one in charge of my perception of it.
‼️so, if you feel unmotivated and bored, it’s time to snap out of it right now - life is too precious to waste it on boring things, unhappy moments, anxious thoughts and bad moods! don’t you think?
