1 cup blanched almond flour
1/2 cup erythritol
2 tsp baking powder
1/4 tsp salt
2 tsp pumpkin pie spice
1/3 cup pumpkin puree
1/4 cup butter, melted
1/2 cup heavy cream
1 tbsp powdered erythritol
1/4 cup butter, room temp
3/4 cup powdered erythritol
1 tbsp hot water
1 tsp instant espresso
1 tsp choczero caramel syrup per slice of cake
1. preheat oven to 350 f. combines dry cake ingredients in a bowl. add wet ingredients, and stir until combined. pour into parchment-lined 8x8inch glass baking dish, and bake for 30 minutes.
2. prepare whipped cream: beat heavy cream with an electric mixer until stiff peaks form. add sweetener.
3. prepare the buttercream: combine all ingredients in a bowl, and stir until smooth.
4. assembly: to get the “poke cake” effect (optional), poke holes into the cake with the back of a wooden spoon. spread cake evenly with whipped cream. spread espresso frosting on top of whipped cream.
5. slice into 12 pieces, and drizzle with choczero caramel syrup immediately before serving.

* 1 1/2 cup mozzarella cheese (shredded)
* 2 tbsp cream cheese (cut into cubes)
* 2 large egg (beaten)
* 1/3 cup coconut flour
1. preheat the oven to 425 degrees f (218 degrees c). line a baking sheet or pizza pan with parchment paper.
2. combine the shredded mozzarella and cubed cream cheese in a large bowl. microwave for 90 seconds, stirring halfway through. stir again at the end until well incorporated.
3. stir in the beaten eggs and coconut flour. knead with your hands until a dough forms. if the dough becomes hard before fully mixed, you can microwave for 10-15 seconds to soften it.
4. spread the dough onto the lined baking pan to 1/4" or 1/3" thickness, using your hands or a rolling pin over a piece of parchment (the rolling pin works better if you have one). use a toothpick or fork to poke lots of holes throughout the crust to prevent bubbling.
5. bake for 6 minutes. poke more holes in any places where you see bubbles forming. bake for 3-7 more minutes, until golden brown.
6. add your toppings (whatever you like) and bake for a further 3-5 minutes!

Low carb/ keto bread!! this recipe by @fatforweightloss is one of my favourite bread recipes to make when i’m craving some smashed avocado on toast. also topped with some fresh rocket grown in my garden 👏.
this is his coconut flour bread and i chose to add some sesame and pumpkin seeds on top. this freezes perfectly and if you are not a fan of coconut flour then he has a great almond flour recipe too.

soft and tender on the inside and crispy on the outside these cauliflower buffalo “wings” are so close to the real deal it’s hard to believe!
this recipe is a great substitution for buffalo wings and can be made gluten-free, vegan, or vegetarian. dip in ranch or blue cheese for even more added flavor.
1 head of cauliflower approx. 4 cups of florets
1/2 cup water
1/2 cup milk for vegan: use water or almond or soy milk
3/4 cup all-purpose flour can sub gluten-free rice flour
2 tsp garlic powder
1 tsp cumin
1 tsp of paprika
1/4 tsp salt
1/4 tsp ground pepper
1 cup frank's red hot sauce
1 tbsp butter for vegan: use earth balance buttery spread
1.line baking sheet(s) with parchment paper or grease very well with oil.preheat your oven to 400-425 f depending on your oven.
2.wash and cut cauliflower head into bite-sized pieces/florets.
3.mix the milk/water/flour and spices in a medium mixing bowl (set aside the hot sauce and butter for later). mix until the batter is thick and is able to coat the cauliflower without dripping.
4.dip the cauliflower in the batter. you can do this one by one or in batches. shake off excess batter before placing cauliflower on the baking sheet. lay the cauliflower single layer on the baking sheet.
5.bake for 20 minutes until golden brown, flipping the florets over halfway through to get all sides golden brown and crispy.
6.while the cauliflower is baking, get your buffalo wing sauce ready. in a small saucepan low heat, melt butter and mix in hot sauce. remove from the heat just as it starts to melt. stir together and set aside.
7.once the cauliflower is done its first bake in the batter, remove them from the oven and put all the baked florets into a mixing bowl with the wing sauce and toss to coat evenly. return cauliflower to the baking sheet and bake in the oven for another 10-15 minutes or until reached desired crispness. serve with ranch, blue cheese, or your favorite dipping sauce. enjoy!

3/4 cup crushed pork rinds ( this replaces the panko)
1 1/2 cups coconut flour
1/8 cup heavy cream @flavorgod garlic lovers seasoning
3 cups coconut oil ( approx )
for the cocktail sauce
1/2 cup @ghughessugarfree ketchup
2 tbsp horseradish
1 1/2 tbsp worchestire
1 squirt of lemon juice
hot sauce ( optional ) to taste
heat your cast iron skillet , add coconut oil to melt and heat up.

Keto colombian empanadas
empanadas shell: 2 cups almond flour, 10 tablespoons coconut flour, 1 teaspoon xanthan gum, 1 packet of sazon goya, 8 ounces cold butter, 1/2 cup cold cream cheese, 2 egg, 4 teaspoons apple cider vinegar. mix all together in a food processor. wrap dough in plastic wrap and chill for a few hours.
meat filling: 1 medium white onion, 1 medium tomato, 1 tsp pink salt, 4 green onions, 3 garlic cloves, 4 tbsp of cilantro, 1 red bell pepper, 1/2 tsp black pepper, 2 pound ground pork and beef. chop everything except meat in a food processor.

3 c. riced broccoli
1 large egg
1 1/2 c. shredded mozzarella
1/4 c. freshly grated parmesan
2 cloves garlic, minced
1/2 tsp. dried oregano
freshly ground black pepper
pinch crushed red pepper flakes (optional)
2 tsp. freshly chopped parsley
1. preheat oven to 425° and line a large baking sheet with parchment paper. microwave riced broccoli for 1 minute to steam. carefully ring out extra moisture from the broccoli using paper towel or cheesecloth.
2. transfer broccoli to a large bowl and add egg, 1 cup mozzarella, parmesan, and garlic. season with oregano, salt, and pepper. transfer dough to baking sheet and shape into a thin, round crust.
3. bake until golden and dried out, 20 minutes. top with remaining 1/2 cup mozzarella and bake until cheese is melted and crust is crispy, 10 minutes more. garnish with parsley and pepper flakes if using.

- 2014 : i had just graduated college. i was around 350 pounds or so maybe more. i try tons of fab diets, but nothing ever stuck.
2015: i ended up losing some weight after college but after i broke my ankle i had gain even more weight back. i had made it to 420 pounds.
2016: after the many medical issues and fail attempts to lose weight i knew i needed to fix my health. at 420 pounds i started a journey that would change my life. from all my pass failed attempts i knew where i went wrong. this wasnt a diet this was going to be a lifestyle change. so started tracking my food intake and exercising daily.
2017 : in 2017 i was down over 200 pounds from 2016. all my hard work had paid off. i continue to make tracking my food and the gym part of my life.
2018: i had to come to the realization that i was at maintenance and i was no longer was overweight. i just had loose skin. i didnt need to lose anymore weight.
2019: ive manage to continue my healthy lifestyle and stay in maintenance. i track my calories randomly sometimes and workout 5 times a week.
through this whole journey ive learned alot of things. 1. weightloss takes time. 2. doesnt matter how much you exercise you cant out run if your over eating your calories.
3. losing weight all about calories in vs calories burn
4. losing weight is hard but not giving up is harder!💪❤

this healthy ranch chicken salad is a huge hit!
a delicious and refreshing salad loaded with chicken and made
with healthy homemade ranch dressing.
1 lb chicken b****t cut into small bite-sized pieces
1 tbsp olive oil
4 cups packed greens of choice
¼ small red onion sliced
¾ cup cherry or grape tomatoes halved
½ english cucumber sliced or chopped
1 avocado sliced
? cup corn fresh or canned
homemade ranch dressing
1 cup plain non-fat greek yogurt
2-3 cloves garlic minced
2 tsp lemon juice
2 tbsp onion finely chopped
1 tbsp dijon mustard
2 tbsp fresh chives finely chopped
1 tbsp fresh parsley finely chopped
1 tbsp fresh dill finely chopped
sea salt and pepper, to taste
start with making the homemade ranch dressing.
add all the ingredients to a small jar, place the lid on, then shake to emulsify.
pour about 1/3 of the dressing over the chicken
and allow it to marinate for at least 15 minutes.
refrigerate the remaining dressing until ready to use.
next, heat oil in a large non-stick pan, and add in the chicken in a single layer.
cook until golden brown and cooked through about 5-7 minutes.
to assemble the salad, add green to a large bowl.
top with remaining ingredients.
just before serving toss with the dressing and enjoy!

2 cups shredded mexican blend cheese
1 lb ground beef
chopped onion and season (optional, to taste - i used garlic powder, onion powder, lawrys seasoning salt and red pepper flakes)
4 slices american cheese
1½ tbsp salsa
1 tbsp butter
preheat oven to 350°f. fill bottom of whoopie pie pan cavities with shredded cheese until you can't see the bottom. meanwhile brown ground beef, add onions and seasoning. once preheated, bake for 4 minutes (the cheese will still be soft and bubbly, but will harden enough to fold them, as they sit). add one spoonful of meat onto half of each melted cheese. using something that will not damage the pan such as a small spatula gently fold the non-covered side over the hamburger side. place tray back in the oven for another 15 minutes to re-melt and solidify their shape. remove from oven and place on paper towel to soak up extra grease. for the nacho cheese, tear up 4 slices of american cheese, add 1½ tbsp of the lowest carb salsa you can find and 1 tbsp butter microwave until melted, stir. open and fill the tacos.
