1 cup blanched almond flour
1/2 cup erythritol
2 tsp baking powder
1/4 tsp salt
2 tsp pumpkin pie spice
1/3 cup pumpkin puree
1/4 cup butter, melted
2 eggs

whipped cream:
1/2 cup heavy cream
1 tbsp powdered erythritol

espresso buttercream:
1/4 cup butter, room temp
3/4 cup powdered erythritol
1 tbsp hot water
1 tsp instant espresso

caramel drizzle:
1 tsp choczero caramel syrup per slice of cake

instructions:
1. preheat oven to 350 f. combines dry cake ingredients in a bowl. add wet ingredients, and stir until combined. pour into parchment-lined 8x8inch glass baking dish, and bake for 30 minutes.
2. prepare whipped cream: beat heavy cream with an electric mixer until stiff peaks form. add sweetener.
3. prepare the buttercream: combine all ingredients in a bowl, and stir until smooth.
4. assembly: to get the “poke cake” effect (optional), poke holes into the cake with the back of a wooden spoon. spread cake evenly with whipped cream. spread espresso frosting on top of whipped cream.
5. slice into 12 pieces, and drizzle with choczero caramel syrup immediately before serving.
6. enjoy!!!

* 2 tbsp cream cheese (cut into cubes)โ 
* 2 large egg (beaten)โ 
* 1/3 cup coconut flourโ

๐Ÿ‘จ๐Ÿฝ‍๐Ÿณ instructions:โ 
1. preheat the oven to 425 degrees f (218 degrees c). line a baking sheet or pizza pan with parchment paper.โ 
2. combine the shredded mozzarella and cubed cream cheese in a large bowl. microwave for 90 seconds, stirring halfway through. stir again at the end until well incorporated.โ 
3. stir in the beaten eggs and coconut flour. knead with your hands until a dough forms. if the dough becomes hard before fully mixed, you can microwave for 10-15 seconds to soften it.โ 
4. spread the dough onto the lined baking pan to 1/4" or 1/3" thickness, using your hands or a rolling pin over a piece of parchment (the rolling pin works better if you have one). use a toothpick or fork to poke lots of holes throughout the crust to prevent bubbling.โ 
5. bake for 6 minutes. poke more holes in any places where you see bubbles forming. bake for 3-7 more minutes, until golden brown.โ 
6. add your toppings (whatever you like) and bake for a further 3-5 minutes!โ

this recipe is a great substitution for buffalo wings and can be made gluten-free, vegan, or vegetarian. dip in ranch or blue cheese for even more added flavor.

ingredients
.
1 head of cauliflower approx. 4 cups of florets
1/2 cup water
1/2 cup milk for vegan: use water or almond or soy milk
3/4 cup all-purpose flour can sub gluten-free rice flour
2 tsp garlic powder
1 tsp cumin
1 tsp of paprika
1/4 tsp salt
1/4 tsp ground pepper
1 cup frank's red hot sauce
1 tbsp butter for vegan: use earth balance buttery spread
.
instructions
.
1.line baking sheet(s) with parchment paper or grease very well with oil.preheat your oven to 400-425 f depending on your oven.
.
2.wash and cut cauliflower head into bite-sized pieces/florets.
.
3.mix the milk/water/flour and spices in a medium mixing bowl (set aside the hot sauce and butter for later). mix until the batter is thick and is able to coat the cauliflower without dripping.

4.dip the cauliflower in the batter. you can do this one by one or in batches. shake off excess batter before placing cauliflower on the baking sheet. lay the cauliflower single layer on the baking sheet.

5.bake for 20 minutes until golden brown, flipping the florets over halfway through to get all sides golden brown and crispy.
.
6.while the cauliflower is baking, get your buffalo wing sauce ready. in a small saucepan low heat, melt butter and mix in hot sauce. remove from the heat just as it starts to melt. stir together and set aside.
.
7.once the cauliflower is done its first bake in the batter, remove them from the oven and put all the baked florets into a mixing bowl with the wing sauce and toss to coat evenly. return cauliflower to the baking sheet and bake in the oven for another 10-15 minutes or until reached desired crispness. serve with ranch, blue cheese, or your favorite dipping sauce. enjoy!

๐Ÿคcoconut shrimp๐Ÿค w/homemade cocktail sauce

1lb raw large ( we used jumbo ) shrimp
1 1/4 cup unsweetened shredded coconut
3/4 cup crushed pork rinds ( this replaces the panko)
1 1/2 cups coconut flour
3 eggs
1/8 cup heavy cream
@flavorgod garlic lovers seasoning
3 cups coconut oil ( approx )

for the cocktail sauce
1/2 cup @ghughessugarfree ketchup
2 tbsp horseradish
1 1/2 tbsp worchestire
1 squirt of lemon juice
hot sauce ( optional ) to taste

heat your cast iron skillet , add coconut oil to melt and heat up.

make your cocktail sauce first so it can sit in the fridge and marry all the flavors.. we combined all ingredients in a small mason jar, shook it up, and put it in fridge.
1) take shrimp out and lay on a paper towel lined baking sheet to kinda dry em a bit.
2) put eggs in a bowl and beat , add heavy cream and whisk in.
3) put coconut flour in a separate bowl. add @flavorgod garlic lovers to taste.
4) crush your pork rinds and put in another bowl , add shredded coconut to pork rinds , combine with your hand.
5) dunk shrimp in egg , then coconut flour, then egg again, then panko ( pork rind ) coconut mixture. as you get them coated place on a wire cooling rack over a baking sheet. repeat til all are coated.
6) place 5 to six in skillet and fry 2 to 3 mins each side til golden brown , place on paper towel lined baking sheet... get out your homemade cocktail sauce and enjoy !!! ๐Ÿ˜๐Ÿ˜๐Ÿ˜ โ €

Keto colombian empanadas
empanadas shell: 2 cups almond flour, 10 tablespoons coconut flour, 1 teaspoon xanthan gum, 1 packet of sazon goya, 8 ounces cold butter, 1/2 cup cold cream cheese, 2 egg, 4 teaspoons apple cider vinegar. mix all together in a food processor. wrap dough in plastic wrap and chill for a few hours.
meat filling: 1 medium white onion, 1 medium tomato, 1 tsp pink salt, 4 green onions, 3 garlic cloves, 4 tbsp of cilantro, 1 red bell pepper, 1/2 tsp black pepper, 2 pound ground pork and beef. chop everything except meat in a food processor.

ingredients
3 c. riced broccoli
1 large egg
1 1/2 c. shredded mozzarella
1/4 c. freshly grated parmesan
2 cloves garlic, minced
1/2 tsp. dried oregano
kosher salt
freshly ground black pepper
pinch crushed red pepper flakes (optional)
2 tsp. freshly chopped parsley

directions
1. preheat oven to 425° and line a large baking sheet with parchment paper. microwave riced broccoli for 1 minute to steam. carefully ring out extra moisture from the broccoli using paper towel or cheesecloth.
2. transfer broccoli to a large bowl and add egg, 1 cup mozzarella, parmesan, and garlic. season with oregano, salt, and pepper. transfer dough to baking sheet and shape into a thin, round crust. 
3. bake until golden and dried out, 20 minutes. top with remaining 1/2 cup mozzarella and bake until cheese is melted and crust is crispy, 10 minutes more. garnish with parsley and pepper flakes if using.

- 2014 : i had just graduated college. i was around 350 pounds or so maybe more. i try tons of fab diets, but nothing ever stuck.
2015: i ended up losing some weight after college but after i broke my ankle i had gain even more weight back. i had made it to 420 pounds.
2016: after the many medical issues and fail attempts to lose weight i knew i needed to fix my health. at 420 pounds i started a journey that would change my life. from all my pass failed attempts i knew where i went wrong. this wasnt a diet this was going to be a lifestyle change. so started tracking my food intake and exercising daily.
2017 : in 2017 i was down over 200 pounds from 2016. all my hard work had paid off. i continue to make tracking my food and the gym part of my life.
2018: i had to come to the realization that i was at maintenance and i was no longer was overweight. i just had loose skin. i didnt need to lose anymore weight.
2019: ive manage to continue my healthy lifestyle and stay in maintenance. i track my calories randomly sometimes and workout 5 times a week.
through this whole journey ive learned alot of things. 1. weightloss takes time. 2. doesnt matter how much you exercise you cant out run if your over eating your calories.
3. losing weight all about calories in vs calories burn
4. losing weight is hard but not giving up is harder!๐Ÿ’ชโค

a delicious and refreshing salad loaded with chicken and made
with healthy homemade ranch dressing.

ingredients:

1 lb chicken b****t cut into small bite-sized pieces
1 tbsp olive oil
4 cups packed greens of choice
¼ small red onion sliced
¾ cup cherry or grape tomatoes halved
½ english cucumber sliced or chopped
1 avocado sliced
? cup corn fresh or canned
.
homemade ranch dressing
1 cup plain non-fat greek yogurt
2-3 cloves garlic minced
2 tsp lemon juice
2 tbsp onion finely chopped
1 tbsp dijon mustard
2 tbsp fresh chives finely chopped
1 tbsp fresh parsley finely chopped
1 tbsp fresh dill finely chopped
sea salt and pepper, to taste
.
ingredients:
start with making the homemade ranch dressing.
add all the ingredients to a small jar, place the lid on, then shake to emulsify.
pour about 1/3 of the dressing over the chicken
and allow it to marinate for at least 15 minutes.
refrigerate the remaining dressing until ready to use.
next, heat oil in a large non-stick pan, and add in the chicken in a single layer.
cook until golden brown and cooked through about 5-7 minutes.
to assemble the salad, add green to a large bowl.
top with remaining ingredients.
just before serving toss with the dressing and enjoy!

4 chicken things
2 teton grass-fed beef brats
as much spinach as you can fit in the pan
tomato
zoodles (optional, i added them because i had a pack i needed to use)

sauce-
olive oil
garlic
italian seasoning
salt
pepper
onion powder
red pepper flakes

season and sauté the chicken thighs until golden brown and cooked through. remove from pan and put the sliced teton sausage in until cooked through. add the zoodles and palmini, cook until warm. add spinach, cook until wilted. add chicken to reheat and top with tomatoes. mix all of the sauce ingredients together in a small bowl, power over the pasta and stir until combined. serve! •

Last up in my keto thanksgiving recipe collection is the leftovers - farmer's pie!! ๐Ÿคค

this is basically just a take on shepherd's pie and it is so delicious and easy! just grease a pie plate or baking dish and fill bottom with leftover @porkkinggood stuffing. top stuffing with chunks of leftover turkey and pour gravy over the turkey. top with leftover best d**n cauli mash and bake at 350 degrees for 20-25 min or until heated thru. i also broil for a few mins just to slightly brown the top before serving. enjoy!

๐Ÿ˜‹ honey garlic steak bites - 5 ingredients, minutes to prep, and only 2 minute cook time!โฃ 1.5 lbs sirloin steak, f*t trimmed, diced into cubes just under 1-inchโฃ
1/3 cup low-sodium soy sauceโฃ
3 tbsp honeyโฃ
3 garlic cloves, minced (1 tbsp)โฃ
2 tbsp olive oil or vegetable oilโฃ
green onions or sesame seeds, for garnish (optional)โฃ

1. place steak pieces in a gallon size resealable bag. โฃ
2. in a mixing bowl whisk together soy sauce, honey and garlic. pour over steak, seal bag while pressing out excess air then rub marinade over steak.โฃ
3. transfer to refrigerator and let marinate 1 - 2 hours.โฃ
4. heat 1 tbsp oil in a heavy non-stick skillet over medium-high heat. โฃ
5. remove half the steak from marinade, transfer to skillet (spaced apart) and let sear until golden brown, about 1 minute then flip to opposite side.โฃ
6. let continue to cook to desired doneness, about 1 minute longer (internal safe temperature is 145 degrees). transfer to a plate and repeat with remaining steak.โฃ
7. serve warm garnished with green onions or sesame seeds if desired.โฃ

it hurts to look at my face from the worse flare up i ever had. i’m not ashamed of the weight gain i had no control over. it hurts because i hid my suffering with so many smiles and jokes. no mother wants her children to see what’s really going on internally.
what happened during my hashimotos-hypothyroidism flare ups?

in a week i could gain 10 pounds. my face would swell so much my skin hurt. joint aches, those were the worse of all. if i sat, walked or lay in bed they all burned. i’d push through it to run six times a week, which only made it worse and only kept my weight from going up at a faster rate.
my skin was so dry, that my tight pants made my swollen belly bleed daily. sleep and naps were never enough. i always looked forward to sleep and couldn’t even enjoy the moment that was happening right then.

per taco (including guacamole, sour cream and nacho cheese):
fat - 6.5g
total carbs - 0.8g
net carbs - 0.5g

ingredients:
2 cups shredded mexican blend cheese
1 lb ground beef
chopped onion and season (optional, to taste - i used garlic powder, onion powder, lawrys seasoning salt and red pepper flakes)
4 slices american cheese
1½ tbsp salsa
1 tbsp butter
.
directions:
preheat oven to 350°f. fill bottom of whoopie pie pan cavities with shredded cheese until you can't see the bottom. meanwhile brown ground beef, add onions and seasoning. once preheated, bake for 4 minutes (the cheese will still be soft and bubbly, but will harden enough to fold them, as they sit). add one spoonful of meat onto half of each melted cheese. using something that will not damage the pan such as a small spatula gently fold the non-covered side over the hamburger side. place tray back in the oven for another 15 minutes to re-melt and solidify their shape. remove from oven and place on paper towel to soak up extra grease. for the nacho cheese, tear up 4 slices of american cheese, add 1½ tbsp of the lowest carb salsa you can find and 1 tbsp butter microwave until melted, stir. open and fill the tacos.
