1/2 cup salted peanut butter (or any nut butter)
1/2 cup blanched almond flour
3 tbsp @choczero sugar-free syrup

1. combine first three ingredients in a bowl until a crumbly dough forms. press into parchment lined 8x4-inch pan (double recipe for 8x8)

bacon jam is easy peasy: 1 pound of bacon diced with a whole sweet onion diced and cooked until onions are translucent and your bacon is crispy. do not drain it! that’s what you are dumping into your low carb pasta along with some heavy cream and your favorite cheeses. mix it up until it is what dreams are made of. the. toss it in a dish, add more cheese, @originalnathansfranks and bake until bubbly.

Time for a chocolate swiss roll. heck yes, because i wanted it.😁

2 1/2 ozs of choczero baking chips ⠀
4 tbsps butter⠀
4 large eggs- best at room temp⠀
3/4 cup allulose (or sweetener of choice)⠀
3/4 cups of almond flour⠀
1/4 tsp xanthan gum⠀
1/4 cup cocoa powder⠀
1/2 tsp baking powder⠀
1/2 tsp baking soda⠀
1/4 tsp salt⠀

line a 10" × 15" baking sheet with patchment paper. preheat oven to 350°⠀

take all dry ingredients, and mix in a bowl. set aside.⠀

beat eggs and sugar until it triples in size. use a hand or stand mixer for this step.⠀

melt @choczero chips and butter in the microwave. mix, and set aside to cool a bit.once this is done...add the melted chocolate to the egg mixture.⠀

fold in the dry ingredients to the wet mixture with a spatula. don't use a mixer for this step. be gentle and treat it like a baby until smooth.⠀

pour batter into lined baking sheet, and bake for 10-12 min. do not over bake. it should be springy to the touch.⠀

take a dish towel and sprinkle with powdered sugar. you will use this to roll the cake, and prevent sticking. it is very important to roll the cake while its hot. do this before putting any filling in it. roll and let cool for about an hour. ⠀

unroll after cooled, add your filling, and the roll it back up.⠀

i used a buttercream frosting for the filling and topped it with a chocolate ganache using @choczero chips. ⠀

i may not have all the answers, but i know what’s worked for me. and this tip has helped many others...so maybe it’s a starting place for you.

the idea of going on a diet felt sort of like getting sentenced to prison. food was my comfort. and the thought of taking that comfort away was suffocating.
-
but i was so sick of how i felt. it wasn’t about looks at that point. my body felt horrible...like i had the flu all of the time. my mind was a wreck...depression and anxiety was taking a toll on my life that even medication was not alleviating.
-
but...i’d start a diet, and do so great all day, but come the evening i would sabotage myself. i would hold off as long as i could until i couldn’t do it anymore, and would eat myself sick.
-
the mindset shift:
1. telling myself it’s not never...it’s just not now.
2. focusing on my why. why am i wanting to lose weight? how do i want to feel? how will my life be different?
3. asking myself the question: what do i want the most vs what do i want now (in the moment)?

boundaries i set:
i promised myself i could eat anything i wanted, but i had to take these three steps:
1. eat a full meal on my plan.
2. drink an entire bottle of water.
3. read my ‘why’ out loud.
if, after these steps, i still wanted to binge...i was free to do so. -
the scale isn’t always consistent. and when my focus was only on looks...and the scale went up...i felt defeated.
but when i changed my focus to how i felt, mentally and physically, i had a consistent measure of progress.

💥3/4 cup bacon crumbles. (optional top with sunflower seeds)

🔹start by mixing the mayo, white wine vinegar and sweetener in a bowl. .

This message is for my binge eaters:

i may not have all the answers, but i know what’s worked for me. and this tip has helped many others...so maybe it’s a starting place for you.
-
the idea of going on a diet felt sort of like getting sentenced to prison. food was my comfort. and the thought of taking that comfort away was suffocating.
-
but i was so sick of how i felt. it wasn’t about looks at that point. my body felt horrible...like i had the flu all of the time. my mind was a wreck...depression and anxiety was taking a toll on my life that even medication was not alleviating.
-
but...i’d start a diet, and do so great all day, but come the evening i would sabotage myself. i would hold off as long as i could until i couldn’t do it anymore, and would eat myself sick.
-
the mindset shift:
1. telling myself it’s not never...it’s just not now.
2. focusing on my why. why am i wanting to lose weight? how do i want to feel? how will my life be different?
3. asking myself the question: what do i want the most vs what do i want now (in the moment)?
-
boundaries i set:
i promised myself i could eat anything i wanted, but i had to take these three steps:
1. eat a full meal on my plan.
2. drink an entire bottle of water.
3. read my ‘why’ out loud.
if, after these steps, i still wanted to binge...i was free to do so. -
the scale isn’t always consistent. and when my focus was only on looks...and the scale went up...i felt defeated.
but when i changed my focus to how i felt, mentally and physically, i had a consistent measure of progress.

My kids are totally missing the minnesota state fair which we always went to in august and since today is national root beer float day we wanted to share a recipe with you!

i made an easy twist on a classic and created these delicious root beer float ice pops and they are absolutely delicious and simple to make!

since we always have zevia in our pantry and i always have my “healthified” ice cream in my freezer, i could easily make keto root beer floats and they were delicious! however, i do know that you all love easy recipes and making homemade ice pops is something that you can make within 2 minutes… the hard part is waiting for them to freeze!

recipe:

1 can @zevia ginger root beer
¼ cup organic heavy cream (or coconut milk for dairy free)
5 drops @frontiercoop root beer stevia

combine all ingredients well.
place in popsicle molds and freeze.

First attempt at a tri-tip roast and i am very proud of myself! i made my own dry rub using salt, pepper, garlic powder, onion powder, and @daksspices cajun voodoo, seared it in a pan with some olive oil and finished cooking on a medium-low heat until about medium. finalized the vibe with some rosemary and melted butter, for a super yum, and super simple dinner. super juicy, super flavorful, and way less intimidating than i thought it would be! i paired this with garlic roasted potatoes and carrots. 🥔 🥕

🇹🇭 tom kha g*i 🇹🇭 (thai coconut milk soup)

1 tbsp avocado oil
1 small yellow onion
3 cloves garlic minced
8 ounces mushrooms chopped
6 cups chicken bone broth
1 (15-ounce) can full-fat coconut milk
1 lb chicken b****t chopped
1 (1-inch) nub ginger peeled and grated
2 stalks lemongrass peeled and chopped into 1” pieces or 2 tbsp lemongrass paste
2 tbsp sweetener
2 tbsp fish sauce
2 tsp lime zest
3 tbsp lime juice
2 tbsp red curry paste
pink salt to taste
optional- sliced thai chilis, serranos or jalapeño

heat the avocado oil in a soup p*t over medium heat, add the onion and cook five minutes.
add the garlic and mushrooms and continue sauteing another 3 minutes.
add the remaining ingredients, stir well, cover the pot, and bring to a boil. reduce the heat to a simmer and cook 20 minutes, until the chicken is cooked through.
serve with lime wedges, sliced chilis and cilantro.

this made about 9 1/2 cups of soup.

Endive tuna salad cups! ⠀

this was the quickest, easiest lunchtime snack! ⠀

1 can tuna⠀
1 endive with leaves pulled apart ⠀
2 tbsp diced red onion ⠀
4 slices homemade pickles (see previous recipe!)⠀
3 stalks celery diced ⠀
salt n pepper to taste ⠀
juice of half a lemon ⠀
1/4 cup mayo⠀
mix everything together in a bowl and spoon into endive leaves. ⠀

its that simple. didn't even have to turn the stove or oven on. win! ⠀

for brunch today i tried out @thesolacompany golden wheat bread for the first time! i was so excited when i found it at my local safeway. my husband and son laughed at me because i was practically jumping up and down. i toasted it with butter and it was pretty good! i really enjoyed this breakfast. my usual sausage and some cheesy scrambled eggs served on my finest china😉

Korean style short ribs for carnivore-ish day 3 lunch 🍴

his and hers style 🥰

these were absolutely perfect and fall off the bone tender. they went amazing with my runny egg yolks 😋

here is how i made them!

ingredients needed:
1 package korean style short ribs
2 tbs soy sauce
1 tsp sesame oil
1/4 cup sugar free @sbrbbq bbq sauce
1/4 cup avocado oil
garlic to taste

directions: mix all ingredients minus the meat in a large bowl. whisk well. brush both sides of the ribs with the sauce. bake at 400 for 6 mins then flip and bake for another 6 (12 mins total). broil on high heat for 2-3 minutes.

for those that are going to say this isn’t carnivore because of the sauce, i say carnivore-ish is the name of my game. i allow small amounts of sauces and green leafy veggies if i’m really wanting them. if you’d like to discuss more feel free to dm me but don’t be rude 😜

80% of the time, fats should come from healthy f*t sources like avocado, mct oil, butter, eggs, fatty meats, macadamia oil. while the remaining 20%, it should come from other f*t sources like chia seeds, milk, flax seeds, nut butters, nuts, etc. but remember, these options from the 20% must be consumed in moderation as the carbs can add up easily.

this is one of my favorite recipes from my grandmother. 💕 i took a shot in the dark and just did keto substitutions to the original recipe, and i couldn’t be happier with how they turned out.

cream together:
1/2 cup softened butter (i used @kerrygoldusa )
6 tbsp @lakanto sweetener
6 tbsp @swervesweetie brown sweetener
1/2 tsp vanilla

then add:
1 egg
1 cup + 2 tbsp @costcokirklandsignature almond flour
1/2 tsp baking soda
1/2 tsp salt
.
.
mix together until uniform. add a rounded tbsp of this mixture to each baking cup (mine made 12). bake at 355 f for 12 minutes.

mix together:
1/2 tsp vanilla
1/2 cup brown sweetener
1 egg
pinch of salt
7 oz (a full bag) of @choczero milk chocolate baking chips
*1/2 cup chopped nuts optional (i didn’t add these)

top each piece with a big spoonful of the above mixture, and bake at 375 f for 13-15 minutes.

they turned out perfect. if you use the brands mentioned above, they come out to 2.2 net carbs per piece. 👌🏻👌🏻👌🏻
